Ingredients

  • 1 Tablespoon butter
  • 1 cup steel cut oats
  • ¼ teaspoon salt
  • 2 cups frozen fruit (a mixture of mango, pineapple, and sliced strawberries works best!)
  • 1 cup coconut cream
  • 1 ½ cups water
  • cup honey
  • 2 teaspoons vanilla
  • ½ cup shredded coconut I use unsweetened, but sweetened would be OK

Instructions

  1. Put instant pot on saute mode. Melt butter in pot.

  2. Add steel cut oats and salt. Saute for 1-2 minutes until oats are slightly toasted.

  3. Add fruit, coconut cream, water, honey, vanilla, and shredded coconut. Secure lid and turn Instant Pot to manual. Cook on manual high pressure for 8 minutes.

  4. Natural release for 10 minutes.

  5. Stir and allow to sit for 5-10 minutes until thickened. When ready to serve, garnish with fruit, honey, and shredded coconut as desired.

Recipe Notes

  • Gluten Free Option: Just make sure you are using steel cuts oats that say Gluten Free on the package!
  • Vegan Option: Swap out the butter for coconut oil and the honey for maple syrup.
  • No coconut cream?  Coconut milk will work as well!
  • Want to up the protein content?  Garnish with macadamia nuts
  • Store in a air tight container in the refrigerator for up to a week.
