How was your week, friends? It was a busy one over here and now it’s time for a little relaxation and a lot of good food. I’ve done basically zero cooking in the last week because of my crazy work schedule and so the first thing I’m doing tomorrow is heading to the grocery store to stock up on ingredients to get back into the kitchen. I’m hungry and feeling so inspired by all of the goodness shared on the internet lately. Here are a few of my favorites for this week’s Good Food Reads. Enjoy!
Avocado, Proscuitto and Egg Sandwiches. Otherwise known as: my perfect breakfast.
Chocolate Croissant Bread Pudding with Bourbon Ice Cream Sauce. Oh my stars. I need this recipe in my life ASAP. My pants probably do not need this recipe but I say, that’s what leggings are for! Am I right?!? Bring it on.
The other night I had the most outrageous craving for S’Mores. It is late winter here in Minnesota and it’s unlikely we’ll be having bonfires anytime soon. Enter: S’mores Cookie Cups with With Marshmallow Frosting. With a graham cracker cookie, chocolate ganache, and marshmallow frosting, these should hit the spot!

An oldie but a goodie via Smitten Kitchen: Tomato-Glazed Meatloaves with Brown Butter Mashed Potatoes. The recipe that finally convinced me to like meatloaf. My husband and son love it, too.
I’ve been really into blender muffins lately (they are so easy!) and these Chocolate Banana Flax Muffins are next on my list. They look really indulgent but are made with mostly healthy ingredients. I’m thinking my son will love them!
I love this blog post on how to line any sized cake pan with parchment paper. I struggle with this, friends. Yes I do. Hopefully I will struggle no more after these tips and tricks!
I came across this recipe for Pistachio Oat Squares on the lovely blog Love & Lemons. It’s from Jessica Murnane, who has a new plant based cookbook out now called One Part Plant. I am so excited to check it out – her whole goal is to inspire people to eat one plant based meal per day. Easy. No judgement. I love it and and can’t wait for my amazon delivery of the book!
