My salads are taking all of the amazing summer produce and making them shine. This Grilled Buffalo Chicken Salad with Blue Cheese Dressing will check all of the boxes. This summer has been crazy busy and part of why I love these summer salads is how easy they are. Grill some protein, add some vegetables, top with a flavorful dressing and Voila! Instant meal.
Plus I just feel good eating fresh, real food. (Who doesn’t?)
Don’t be intimidated by making homemade salad dressings, they are so, so easy to make! I store mine in these Ball jars (affiliate link) in my refrigerator, they stay good for up to a week!

Grilled Buffalo Chicken Salad with Blue Cheese Dressing
Ingredients
Grilled Buffalo Chicken Salad
- 3 chicken breasts
- 1/4 cup Buffalo sauce + extra for drizzling (I use Frank's Buffalo Sauce)
- 5 ounces salad greens
- 1 cucumber, sliced thinly
- 1/2 cup radishes, sliced thinly
- 1 cup tomatoes, halved
- 1/2 cup blue cheese crumbles
- 2 Tablespoons chives, chopped
Blue Cheese Dressing
- 1 cup Greek yogurt
- 1/2 cup buttermilk
- 2 Tablespoons mayonnaise
- 1 Tablespoon white wine vinegar
- 4 ounces blue cheese crumbles
- 1/2 teaspoon salt
Instructions
Blue Cheese Dressing

Combine Greek yogurt, buttermilk and mayonnaise in a small bowl. Add white wine vinegar, blue cheese crumbles and salt. Mix well.

Transfer dressing to glass container and allow to rest in the refrigerator for at least 30 minutes.
Grilled Buffalo Chicken Salad

Place chicken and buffalo sauce into a ziplock bag. Marinade for 30 minutes. Remove chicken from the bag and discard bag and left over buffalo sauce.

Grill chicken over medium-high heat for approximately 3 minutes per side or until temperature reaches 160°F. Remove from grill and allow chicken to rest for 10 minutes.

On a platter, heap salad greens. Mound blue cheese crumbles in the center of the salad greens. Arrange cucumber slices, radish slices, and tomatoes.

Slice grilled buffalo chicken and arrange on salad greens. Drizzle additional buffalo sauce over chicken. Sprinkle salad with chopped chives. Serve salad with Blue Cheese Dressing.
Recipe Notes
Go ahead and add any other vegetables you like!

This would be one of my husband’s favorite salads. Not only does it have buffalo chicken but his favorite type of salad dressing – blue cheese! Of course, like you, I am a little salad crazy this summer but hey, it’s hot out there and salads are so light and refreshing. Love the added radishes.
