As we approach the upcoming holiday weekend and the world continues the process of reopening, many people will be entertaining (at an appropriate social distance!) for the first time in awhile. I don’t know about you, but I plan to celebrate the reentry into some social events with dessert. Lots of it. Here are my favorite Simple Summer Desserts!
No Bake Ice Cream Bars
There is no question, ice cream is my #1 go to dessert in the summer time. It is also the definition of simple. It’s refreshing and indulgent and so easy to make! These No Bake Ice Cream Bars are perfect for easy entertaining. You can make them up to a week in advance and, once frozen, can even be sliced ahead of time for simple serving!
Oreo Sweet Cream Ice Cream
Speaking of ice cream, this Oreo Sweet Cream Ice Cream is a summer dessert dream. It does require a little bit of pre-planning and an ice cream maker, but you won’t regret the time or investment. Serve it up sundae style or in simple waffle cones (this is a fun recipe!), and sit back and enjoy.
Pomegranate Lime Sorbet
Want something a little lighter for those hot summer days? Try our Pomegranate Lime Sorbet. It is a little sweet, a little tart, and takes only minutes to make. You can make it with or without an ice cream maker. It’s also great topped off with a little prosecco for a fun twist on a dessert cocktail. Simple summer dessert for the win!
Blueberry Lemon Cream Cheese Tart
It is berry season and this Blueberry Lemon Cream Cheese Tart is a fantastic way to use up those gorgeous berries. It is deceptively simple, but is absolutely a showstopper. It’s perfect for summer entertaining!

This crazy pandemic has taken so many things, and the cancellation of the legendary Minnesota State Fair is definitely one of the big bummers of summer 2020.
