It has been one crazy winter here in Minneapolis. For the first time in nearly 50 years, Seattle had more snow than we did and it’s going to be 60 degrees (again!) in a few days. I’m definitely not complaining as I am a winter fan only from Thanksgiving to just after New Years. As the weather has warmed, I’ve found myself searching out the first flavors of spring: rhubarb, asparagus, and all the fresh veggies. Get ready people, because this week’s Good Food Reads is chock full of spring veggie goodness. Happy Reading!
Starting us off is Love & Lemons with a great blog post on Almost-Spring Recipes. I want to make them all, especially the Tart Cherry Tabbouleh and the Twice Baked Sweet Potatoes with Broccoli.
I’m always a fan of Danielle Walker’s recipes and love her Against All Grain cookbooks. This Thai Green Salad with Shrimp and Spicy Almond Dressing is perfect for a weeknight meal or lunch on the go (yes!!!).
I’m still working on my spiralizing game (ps: can anyone tell me how to really clean those things without slicing off a finger?!?!) but my four year old loves zoodles and I’m thinking these Greek Zoodles are going to be added to the dinner rotation ASAP.
One thing I’ve been working on since returning to work is meal prepping. It’s definitely still a work in progress but with things like the these Cilantro Lime Chicken bowls with cauliflower rice, I’m slowly making headway.
And…just because I can’t do a Good Food Reads without a little something sweet, how about these Salted Caramel Protein Balls? I’m definitely trying them out!
