I’m super jealous of those of my friends who don’t have the need to constantly eat chips, bread and crackers. Although sadly, I will never be able to give these foods up altogether, I am definitely trying to eat less carbohydrates. And that means I need snacks. Salt is my downfall, my kryptonite, and found on each one of the foods I just cannot pass up. And these are usually high carb foods. So let’s start there. Here are some lower carb snacks for salt lovers like me.
Let’s start with our very own Roasted Chickpeas with a Hint of Lime. Holly came up with this one and it is the bomb. Crunchy, salty and full of protein, this is the perfect travel snack. Using this Microplane Citrus Zester (affiliate link) will zest your limes quickly and easily making this recipe simple to make!
I just planted two types of kale in my garden. My kids actually like kale chips so I’ve got my eye on these “Cheesy” Jalapeño-Ranch Kale Chips by Food to Glow. Vegan, raw, and actually healthy, these are going to be my new go-to. I might even buy a dehydrator to make these more easily (But shhhh…please don’t tell my husband!).
Garlic Dill Baked Cucumber Chips by Peace, Love, and Low Carb. Be still my beating heart. This photo alone is enough to make me swoon, but garlic and dill? I’m sold. Low Carb Crackers by Savory Tooth look like the perfect crackers for dipping. I just bought a new beet and lemon hummus from my local Co-op and these would be the perfect vehicle to get the dip to my mouth. Does anyone else think like that? Priority number 1. Dip to mouth. Who’s with me?
Who doesn’t love pizza! And pizza in chip form? Can’t wait to try these Low Carb Pizza Chips by Beauty and the Foodie. Dipped in pizza sauce. Have I mentioned that I addicted to dipping? I’ve been known to order a food purely for the condiments that come with it. Weird? Maybe.

Look! These Pimento Cheese Stuffed Peppers from Peas and Crayons actually hold their own dip! Genius! Plus these are a feast for the eyes with all of their beautiful colors! The perfect low carb summer snack.
I love pickles. I can’t live without bacon. And these Bacon Wrapped Pickles by Dancing Through the Rain are so simple my 7 year old could make these for me. In fact we’re going to try that. Soon. With the dip (sensing a theme here?).
What is an easier low carb snack than a hard boiled egg? Instant Pot Hard Boiled Eggs by Kristine’s Kitchen will save you time and money. Throw a batch in the Instant Pot now. My apple tree is constantly giving us more apples than we know what to do with and after canning apple pie filling and applesauce, I plan on making batches and batches of these Apple Chips by Living Sweet Moments. This is a no-dehydrator needed recipe, but if I’m already getting it for the kale chips…well? Again, please don’t tell my husband!
Growing up in the era of the low-fat diet, these Chocolate Keto Fat Bombs by Diabetes Strong initially made me nervous (INSANELY excited, but nervous). But now I am fully on board with these little nuggets of goodness. And they are so satisfying, you only need one.
