I don’t know if it’s the warm weather or the abundance of fresh veggies, but in the summer I have a serious need to eat salads just about every day. More often than not, I just chop up whatever I have in my fridge at the time and toss it into a giant bowl with a handful of lettuce or spinach and call it a day. Recently, I’ve been inspired to up my salad game and have been slowly collecting new recipes for salads of all kinds. This week’s Good Food Reads: Summer Salads is my new salad to do list!
I can’t wait to give this recipe for Tomato, Peach, and Corn Panzanella a go later this summer when the corn is so sweet and fresh. Talk about the best of summer produce all in one recipe!
My husband loves a classic wedge salad (and let’s be honest, who doesn’t?!?). This twist on the classic would be so fun for a casual dinner party: Crispy Chickpea Wedge Salad with Avocado Ranch
Another salad classic? The Cobb. Try our version here: Cobb Salad with Creamy Gorgonzola Dressing I promise, once you make your own gorgonzola dressing, you’ll never buy it in a jar again.
I can’t wait to try this Chopped Ramen Noodle Salad with Grilled Teriyaki Turkey from A Farmgirl’s Dabbles. There is sweet, savory, and crunch in one recipe! Yes!
Summer Vegetable Salad with Charred Lime Vinaigrette has all of my favorite summer veggies (and radishes!) with a super cool dressing that uses charred limes for extra flavor.
I frequently make a big batch of quinoa in my Instant Pot (*affiliate link) and keep it in the fridge to add to meals for the week. This Kale, Edamame, & Quinoa Salad with Lemon Vinaigrette would be such a great use for meal prepped grains! These Summer Quinoa Salad Jars with Lemon Dill Dressing would also be fantastic!
I love all of the simple, savory elements in this Tuscan Tuna and White Bean Salad. I think it would be a great salad for on the go picnics or work lunch.
I make a big batch of this Thai Chicken Quinoa Salad with Peanut Dressing on the regular. It’s got a super creamy, satisfying dressing and is studded with tons of fresh veggies!
Every now and then, I crave a good Greek Salad. This version is really a pasta-salad twist on the classic but I think it will be so great for summer barbecues. This Chopped Asparagus Salad would also be fantastic for a summer gathering.
