Every year August takes me by surprise. Here in Minnesota it’s usually sunny, hot, and the produce is ready to be pulled out of gardens. Yet, we all want to spend the absolute maximum time playing outside, soaking up the summer sun and cooling ourselves in the shimmering lakes, before it inevitably turns cold again. No one wants to be spending time in the kitchen if they can help it. That’s why I always say “August is for Grilling”…
August is a gorgeous month in Minnesota. It’s warm and sunny and the days are long. Pulling out the grill is the perfect way to get dinner made fast, while still soaking up that summer sun. Here are a few ideas!
Flank Steak with Chimichurri– One of my favorite meals. Tender steak with a vibrant herb sauce. Delicious with grilled corn, a fresh salad and crusty bread. Slice it thin and use the leftovers for sandwiches the following day.
Chimichurri Pork Tenderloin– Anyone that knows me, knows that I would eat chimichurri on just about anything. Something about that garlicky, herby sauce screams summer to me. Have leftover chimichurri? Marinate a pork tenderloin in it. Throw it on the grill. Dinner: accomplished.
Cabin Burgers– No good article about grilling would be complete without a burger recipe. Grill the bun, slice an avocado, whip up some Sriracha mayo, sprinkle with blue cheese (or top with your favorite cheese) and prepare to enjoy.
Grilled Peach and Herb Panzanella Salad– Grilled meat not your thing? No problem. Grill up some peaches and create this amazing salad complete with white beans for additional protein. Summer on a plate.
Mexican Street Corn– Have you ever grilled your corn? If you have, I’m sure you’ll agree, it’s the best way to do it! Add this spiced mayo and sprinkle with herbs and Cotija cheese and prepare to be wowed.
Baba Ghanoush– Did you get eggplant in your CSA (more about CSAs here!) and have no idea what to do with it? Griling it makes it smoky and delicious. Make this great dip perfect for dipping vegetables, pita chips, or spreading on grilled bread.
Grilled Shrimp Skewers– Mix up an easy spice rub, rub some shrimp, and throw it on the grill for a few minutes. Simple and delicious. Better yet-serve it with some chimichurri!
