Every year August takes me by surprise. Here in Minnesota it’s usually sunny, hot, and the produce is ready to be pulled out of gardens. Yet, we all want to spend the absolute maximum time playing outside, soaking up the summer sun and cooling ourselves in the shimmering lakes, before it inevitably turns cold again. Summer Vegetable Breakfast Burritos

Social distancing is making me yearn for our cabin weekend that we had last year.  In case you missed this recipe from last summer, here it is again!  It’s perfect to use up the zucchini that is growing like crazy in my garden this year!

Breakfast always brings out strong feelings in people.  Some folks can’t live without eating two minutes after getting out of bed.  Some people never eat breakfast and instead start with lunch.  I was always pretty meh about breakfast, but that’s when I thought breakfast was supposed to be sugary cereals (blech…).  These Summer Vegetable Breakfast Burritos have totally swayed me into the breakfast is important camp!  And they’re easy!

Fourth of July Favorites

Despite the fact that it feels like summer just started yesterday, the Fourth of July is nearly upon us! If you’ve been a blog reader for some time, you might know that in my family, the Fourth of July is a big deal. Each year we gather at my grandmother’s lake home for a few days of classic Minnesota lake life. It is hands down one of my favorite times of the year. I love the sun soaked days chasing happy kids around and catching up with my extended family. Oh, and did I mention the food is always amazing? My grandmother is an incredible cook and always makes a fantastic feast on the Fourth. Filled with summertime classics as well as old family favorites, it is a meal everyone looks forward. Over time, and as our family has grown, the meal has become a larger family project, with everyone contributing their Fourth of July favorites. Today, I’m sharing my Fourth of July Favorites including some new recipes that I can’t wait to try this upcoming holiday weekend!

Sweet corn, zucchini, and chicken tostadasThese Sweet Corn, Zucchini, and Chicken Tostadas have been a late spring and summer favorite in my house for the past few years. Based on a Cooking Light recipe I’ve adapted over time, they make quick and easy dinner that takes advantage of the best of summer – fresh sweet corn, abundant crisp zucchini, and a light sauce made from salsa verde, onions, and a dash of hot roasted chilis. The tostadas are studded with quick cooking chicken tenders coated in a basic mixture of cumin, salt, and pepper.  Piled on crisp tostadas and topped with fresh cilantro and shredded Mexican blend cheese, all it takes is a twist of lime and a few chunks of a perfectly ripe avocado and you have a perfect weeknight meal that your whole family will love. …

Mexican Street Corn is an easy way to elevate your corn on the cob.  Flavorful and juicy, this is a side dish that will please everyone.  In fact you’ll defintely want to make extras!

As many of you know, I usually pack up my family and head to sunny Arizona for spring break.  My in-laws have a winter home there, and we all love to hang out together, soaking up the sun by the pool, hiking in the mountains, and yes-I usually cook to my heart’s content.  This is win-win for all of us, as my mother-in-law is a willing sous chef, my kids like to get in on the action and my father-in-law loves to try new foods.  This year, I had all kinds of new favorites to try out on them, and they didn’t disappoint….
