First things first, guys. I made this amazing Crockpot Lentil Soup from Pinch of Yum the other day and it was amazing. It’s full of flavor and easy, easy, easy to prepare. We try to stick with Meatless Mondays in our house and I’m happy to report this soup was the perfect vegetarian meal! It is filling, healthy, and hearty. I did make a few tweaks to Lindsay’s recipe – my husband hates kale (I know! He says it’s a garnish, not a food!) so I used chopped spinach in place of the kale. Also, I didn’t have any yellow split peas on hand so I made the whole thing with lentils. I highly recommend her suggestion to finish the soup with a splash of red wine vinegar and serve with crusty bread and parmesan.
These Blood Orange Jello Shots make me giggle a little. Or a lot. I know that the internet is going nuts over all things Blood Orange right now (it’s citrus season!), but these might be a little too hip for me!
This is my kind of science. A study out of the University of Washington suggests that drinking wine before bed may support weight loss. Any science that supports NIGHT WINE is solid in my book. Bring on the resveratrol!
The secret to good toast? The freezer. Check out this article from the NY Times on why you should slice and freeze your bread for toast. I have to say, while on maternity leave after the birth of my son, my mom brought a few loaves of my favorite bread and left it sliced in the freezer. There was no better treat during those early mornings with my baby than a slice of hot, buttered toast and a cup of coffee.
I don’t know if it’s winter carb cravings or pure laziness, but I’ve been loving baked potatoes lately. Usually I love them made very simply with salt and pepper and a large dollop of cottage cheese (I know, I know – I’m an old lady!) but I’m thinking this Loaded Baked Potato Dip might be an interesting twist on my recent obsession. Also, can we talk about how the literature-geek in me is LOVING the blog name, The Crepes of Wrath. Yes!!! A new favorite for sure.
