My daughter (who used to be the pickiest eater of all times) has discovered the beauty of Chipotle. Which means we often make and eat burrito bowls, as they are so, so easy to make at home. Especially if you have the “right” rice-like this Instant Pot Cilantro Lime Rice. Quick, easy, and hands off, perfect for any weeknight. Try it yourself!
Jump to RecipeBy now, most of you have heard about my daughter and the fact that she only at buttered noodles and chicken nuggets until she was eight. Well, mamas hang in there, I have good news to report. She is now a great eater of almost all foods (except cheese…still won’t eat cheese…). And in our quest to develop her palate, and to make my cooking dinner easier, we started eating “bowls”.
I would make a protein, a bunch of vegetables, and a grain. The rule was you had to try everything, but you could have more of that which you liked and less of that which you didn’t. And I’ll always make a sauce. (Because sauce is everything.) Throw it together in a bowl and dinner is served. My kids gravitated towards Mexican themed bowls with chicken, corn, beans, tomatoes, and this Cilantro Lime Rice. Made easier by the Instant Pot!
So you may be asking what Instant Pot did I use to make this Instant Pot Cilantro Lime Rice? Well, although there are newer models, I still love my 7-in-1 Duo. And the slightly newer model linked here has the benefit of an automatic sealing lid and even more safety features (for those of you who still fear the Instant Pot, you surely don’t need to!). Easy one pot cooking.
Instant Pot Cilantro Lime Rice
This Instant Pot Cilantro Lime Rice is quick, uses only a few ingredients and is easy to make! Perfect for your weeknight dinner.
Ingredients
- 1 Tablespoon olive oil
- 1 cup white rice I use jasmine rice but basmati or long grain would work as well
- 1 1/4 cup water
- 1 teaspoon lime zest
- 1/2 teaspoon salt
- 2 Tablespoons fresh lime juice
- 1/4 cup chopped cilantro
Instructions

Press the Sauté button on your Instant Pot. Add olive oil and allow it to heat up.

Add rice and Sauté for 1 minute, stirring occasionally. Add water, lime zest, and salt.

Cover Instant Pot and push Manual button. Set for 5 minutes. When done, allow Instant Pot to natural release (about 10 minutes)

Fluff rice with fork and transfer to a serving bowl.

Stir in lime juice and cilantro. Taste and season with salt as needed.

Serve and enjoy!
