Happy Friday, friends! It’s the end of another work week over here at With Two Spoons and we are welcoming the weekend with some Good Food Reads. After a week of over indulging on Valentine’s sweets, I’m hoping to take my cooking and eating in a slightly more healthy direction this weekend. I always have such good intentions and then I find amazing recipes like the Whoopie Pies or fruit filled crepes and that plan goes out the window. Does anyone else have that problem? I should really just look at recipes that only contain kale, right? Oh wait…that would be miserable. So, with that randomness in mind, onward we go with this week’s Good Food Reads!
Are you guys fans of cooking with cast iron? My sweet hubby gave me a gorgeous Le Creuset cast iron skillet for Christmas a few years ago and I have to say, I’m in love. Despite rumors to the contrary, it’s easy to season and clean, and is virtually nonstick without all of the icky toxins. I use it all the time and will definitely be doing more with it after reading this piece on 7 Surprising Ways to Use Your Cast Iron Skillet (Cooking Light)
Waffle Iron Hashbrowns are such a great kitchen hack for the weekend! These are definitely on my list for tomorrow morning.
I’ve got a few Williams-Sonoma gift cards burning a hole in my wallet and I’m thinking that I might need to get a crepe pan and try out these Fruit Filled Crepes. I have never actually made crepes (I know, I know) but still have dreams about the most perfect nutella crepe I had the last time I was in Paris.
A roast chicken is always such a Sunday Dinner classic. I love the idea of this Feta Brined Roast Chicken by Melissa Clark. They suggest to pair it with a greek version of ratatouille, and I couldn’t agree more! Definitely making this combo come Sunday.

This one is for you, Lane: Creamy Polenta with Roasted Beets. Lane has a total love of beets and you could say I’m a bit of a skeptic (I think they mostly taste like dirt!!). We are both wild fans of polenta, however, so I’m gonna give this one a try. Anyone know how to get beets to not taste like a spoonful of soil?
Love this InstantPot hack for cooking spaghetti squash. I tried it last week and it was fantastic! So great for a last minute, healthy meal.
Finally, I’m loving this All Purpose Creamy Green Goddess Dressing and Dip from Fit Foodie Finds. It’s good on anything.
