It’s hard to believe that the Fourth of July is so quickly approaching! As I’m preparing for our traditional cabin weekend filled with family and (way too much) good food, I’ve been stockpiling new recipes to try. This week’s Good (Food) Reads is a collection of some of the best recipes I’ve stumbled upon this past week and can’t wait to try.
Easy Corn Fritters via Sally’s Baking Addiction. Because nothing says summer like fresh sweet corn.
Simple Roasted Red Pepper Pasta from Half Baked Harvest. A gorgeous summer pasta studded with arugula and fresh burrata! I will forever be a carb lover and this recipe looks like the prefect excuse to eat some carbs and cheese. YUM.
Last Minute Bake Sale Cake (Dinner: A Love Story). I’m always looking for a quick and easy anytime cake, and this pound cake with berries seems like just the ticket. I love that it uses greek yogurt or sour cream to keep things moist (yes! I said it!).
Red, White, and Blue Popsicles from Danielle at Against All Grain. Use with these adorable Zoku Fish Pop molds! I can’t wait for my son to see these. Such a step up from standard popsicles.
Grilled Pound Cake with Lemon Curd via A Calculated Whisk. I think these would also be great with our Lime Curd with a Hint of Vanilla!
Frozen Banana Creams. For my sweet toothed husband.
Grilled Cheese with Havarti, Sun Dried Tomato, and Prosciutto from Andie Mitchell. Why don’t I ever remember to fancy up my sandwhiches??!? Every time I see a recipe like this, I have serious sandwich envy.
Loaded BBQ Chicken Salad via Spoon Fork Bacon. We try to have a big salad for dinner at least once a week and this recipe seems like a crowd pleaser – hearty and full of fresh flavor.
Naked Chocolate Peanut Butter Layer Cake via Audra The Baker Chick. Because peanut butter layer cake and chocolate needs to happen.
Alexandra’s Kitchen absolutely bringing it with Huevos Rancheros with Blistered Salsa Roja. Can someone come over and make these for me? Pretty please?
