You might notice that this week’s collection of Good Food Reads is filled with comfort foods and desserts. Since I’m currently nearing the end of my pregnancy, I make absolutely no apologies for that! I’m still trying to balance these treat meals and desserts with healthy helpings of fruits and vegetables and lots of walking, but let’s face it, sometimes you just need comfort food. In that spirit, here are this week’s Good Food Reads. I hope you enjoy!
White Chicken Enchilada Skillet (Dinners, Dishes and Desserts). Oh man, this looks so good. I’m a huge fan of skillet dinners and this one sounds fantastic. I think it would be great with some cilantro cauliflower rice!
Chicken Black Bean Pumpkin Chili (Greens and Chocolate). Seriously, chicken chili with black beans and pumpkin? A comfort food with some added nutrition points. Can’t wait to try this one this fall.
Fig Sticky Buns with Caramel Glaze (Love & Olive Oil). Oh man, do I want to make these NOW. My husband loves sticky buns and I love figs. Seems like a good reason to bust out the baking gear. I wonder how they freeze?
Salted Chocolate Peanut Butter Cups (As Easy As Apple Pie), because sometimes a girl just needs chocolate.
Lemon Blueberry Macarons (Chocolate and Carrots). I’m posting these here because I have a serious love affair with macarons. I’m going to be totally honest with you though, I still haven’t been brave enough to try making them at home. Maybe this time??? Anyone have any tips?
Apple Crisp Muffins (Broma Bakery). The last muffins I made from Broma Bakery were fantastic (Orange Mascarpone Fig – find the recipe here) and now I’m really excited to try these with some fresh fall apples! Is anyone else just going crazy with the apples right now? I’m eating at least one day. LOVE fall honeycrisps!
CousCous with Chicken and Root Vegetables (Cooking Light). See? I’m not all bad with the recipes this week. For those of you looking for something comforting but on the lighter side, try this couscous and chicken dish from Cooking Light.
Sweet and Sour Turkey Meatballs with Polenta (Cooking Light). My three year old loves chicken meatballs and I’m thinking these turkey meatballs might be a nice change up in the rotation. Can’t wait to see what he thinks of the polenta!
Taco Tater Tot Hotdish (A Farmgirl’s Dabbles). Because in Minnesota, nothing says comfort food more than Tater Tot Hotdish. You’re welcome.
Coconut Chickpea Curry (Jessica in the Kitchen). And finally, this curry. I love that it’s one pot AND vegan. Will be trying this one ASAP.
