I am so excited about our picks for this week’s Good Food Reads. One of my favorite things about writing this part of the blog is all of the fun internet food inspiration I get to sort through and ooh and aah over each week. The blog world is filled with such good stuff! I am continually impressed with all of the creative and super yummy things ya’ll are putting out there. I’m pretty sure this week’s Good Food Reads has something for everyone – from the sweet tooth to the veggie lover and in between!
I am so crazy excited to try this Green Goddess Lasagna from Broma Bakery. I had really high hopes for a butternut squash-brussels version last week and while it was fine, it just wasn’t awesome. So, here’s hoping this is a non-traditional lasagna winner! I love that it’s got asparagus and green enchilada sauce. Yum – and so unexpected!
I don’t think (actually, I know) I will have any time to make this gorgeous Cinnamon Swirl Layer Cake from Love & Olive Oil this week but I can’t. stop. staring. It’s so beautiful! Filing this one away for a rainy day.
What I am going to find time to make this week is a batch of these gorgeous Blueberry Almond Power Muffins. I love that they are packed with protein and without any refined sugar (*note: I have nothing against sugar. I just try to balance a little! And I’m clearly saving my sugar for that dreamy cinnamon cake…). I think these will be the perfect treat to pack for work! I’m also thinking a batch of these Chocolate Banana Muffins will happen today. I’ve got some bananas and greek yogurt that need to be used up!
Speaking of bananas, check out this Caramelized Banana Oatmeal Breakfast from Joy the Baker. I’m still on a quest to *like* oatmeal as I know it’s good for me, especially as a nursing mama. Maybe this dessert like dish will finally get me on the oats side??
It’s no secret that I love Molly Yeh’s Tater Tot Chicken Pot Hotdish so it’s probably not surprising that I am super excited to try out this Tater Tot Breakfast Skillet from How Sweet It Is. Tots for the win!
I have a big bag of organic zucchini sitting in my fridge (thank you, Costco!) and in addition to some muffins and zoodles, I’m planning to try some of these Baked Parmesan Zucchini Crisps. I’m hoping they’re like my State Fair favorites – fried dill pickles. Except, well, they’re not pickles, and they’re not fried. A girl can dream, right?!?! Anyhow, they look delicious and I’m gonna make them tomorrow!
Finally, I give you this genius mashup from a new to me blog (Real Food By Dad) that I am really loving: Taco Shells. Yup, why oh why didn’t I think of that?!?! Taco filling stuffed shells. My taco loving 4 year old is going to be so very happy!
