We’ve definitely had muffins on the brain lately.  And although we gave you a great gluten free blender muffin recipe last week, between the crazy amounts of zucchini in my garden and my need to have quick portable breakfasts and snacks, I knew I needed to give you these Chocolate Chip Zucchini Muffins as well.  Not only are these muffins moist and super flavorful, they also freeze well!  Read on for the recipe!

Carrot Zucchini Fritters with Lemon Basil Aioli (Whole 30, Gluten Free)

Does anyone else out there subscribe to a Community Supported Agriculture (CSA) share?  I get one through a local farm (Featherstone Farms, I love you!), and when I pick up my box of fresh vegetables each week, I get really excited about all of the amazing things that I am going to make.  Perfect heads of lettuce, deep purple eggplants, bright green peppers, sweet yellow corn.

This year I’ve been getting a lot of carrots and zucchini in my boxes, which just so happens to be the perfect combination for making these Carrot Zucchini Fritters with Lemon Basil Aioli.

Chocolate Chip Zucchini Bread

Has anyone else had a bumper crop of zucchini this summer?  My tiny backyard garden has been producing zucchini which are the size of clubs.  I’ve shredded and frozen more zucchini this summer than I’ve seen in my life.  And of course as I’ve been shredding my zucchini, I’ve had to make my Chocolate Chip Zucchini Bread. Strangely, even though this quick bread really can’t be qualified as “healthy”, in my book it is because…well, ZUCCHINI!

Apple Zucchini Toddler Muffins

MuffinsOne of the things I find most challenging as a mama is finding healthy things to make that my kids will eat and I feel good about feeding them…and that don’t take eight hours to make and are filled with exotic ingredients that are hard to find and cost an arm and a leg. Nowhere is this challenge more evident for me than in packing lunch for my kiddos for preschool/daycare. Our school is wonderful and does have a school lunch option but for a myriad of reasons, we’ve always packed lunch for them. One of my favorite little things to include are these Apple Zucchini Toddler Muffins. Adapted from a recipe by Super Healthy Kids, these tiny muffins pack a pretty good nutritional punch and they are super easy to make. Win! …

Sweet corn, zucchini, and chicken tostadasThese Sweet Corn, Zucchini, and Chicken Tostadas have been a late spring and summer favorite in my house for the past few years. Based on a Cooking Light recipe I’ve adapted over time, they make quick and easy dinner that takes advantage of the best of summer – fresh sweet corn, abundant crisp zucchini, and a light sauce made from salsa verde, onions, and a dash of hot roasted chilis. The tostadas are studded with quick cooking chicken tenders coated in a basic mixture of cumin, salt, and pepper.  Piled on crisp tostadas and topped with fresh cilantro and shredded Mexican blend cheese, all it takes is a twist of lime and a few chunks of a perfectly ripe avocado and you have a perfect weeknight meal that your whole family will love. …
