Happy Wednesday, Friends! I am so excited to share this week’s Good Food Reads with you. One of the best parts of writing this blog is getting to read and share the fun things that others in this great community are doing in their kitchens. I don’t know about you, but they always inspire me to get up and get cooking! Right now, I’m feeling inspired by the changing season and a transition back to comfort foods. Fluffy Whipped Blueberry Butter (A Farmgirl’s Dabbles). Oh, you guys, I love this recipe idea. I mean, I pretty much love everything posted on A Farmgirl’s Dabbles but this one has me ready to hit the kitchen! I’m going to try it with some blueberries I froze at the height of the season earlier this summer and will report back as to how it turned out.
Garlic Butter Smashed Sweet Potatoes with Parmesan (Cafe Delites). I’ve long been a fan of smashed potatoes, but have never thought to do them with sweet potatoes. What a fun, flavorful twist!
Sausage and Peppers with Zucchini Noodles (Two Peas and Their Pod). To balance my current carb addiction, I’m thinking this recipe for zucchini noodles with peppers and sausage will be perfect!
One of my winter staple recipes is slow cooker carnitas made into burrito bowls. I’ve never really found a quick way to make refried beans and I don’t love the canned ones. I’m hoping these Pressure Cooker Refried Beans (Mel’s Kitchen Cafe) are a great solution!
Frozen Peach Bellinis (Sugar and Charm). Saving this recipe for later because – wow, do these look good!
I have a major hummus addiction and love to make big batches at home when I’m entertaining. This beautiful Slow Roasted Tomato and Basil Hummus (The Kitchen McCabe) will be a fun addition to the arsenal and is definitely on the menu for my next gathering.
Thai Chicken Salad (Larb Gai) via Alexandra’s Kitchen. I love Thai food and this sounds like the perfect weekend lunch.
And because we are now officially into fall, I couldn’t make a Good Food Reads list without including something pumpkin spiced, right? So, here is a gorgeous recipe for Pumpkin Pancakes with Pecan Praline Syrup (Celebrating Sweets). I’ll take two plates, thank you very much. I’m also super intrigued by this Slow Cooker Pumpkin French Toast from Damn Delicious. I love a good french toast bake and I’m so curious about introducing a slow cooker version. Has anyone tried it?
