Spring has sprung. Have I mentioned how much I love spring? The birds are singing, the tulips have bloomed and I can finally send my kids to school without a jacket! Just last week, Holly and I attended our first Wildtree party to put together freezer meals that our husbands could grill while we were at work. We had a great time drinking wine and hanging out with friends (that we hadn’t seen in far too long!) while putting together a wide array of freezer meals. Total win. But despite the beautiful weather and the crazy chaotic activity schedule, we are never too busy to bring you another edition of Good Food Reads. Let’s get started shall we?
First of all, I’m just not ready for Cinco de Mayo to be over for the year (for the record, Mexican food may be my Achilles heel). I’m going to continue to celebrate and I can’t think of any more fun way to party than with these Mini Taco Hand Pies by Lemons for Lulu and these Cheddar Crisps with Guacamole by Wholesome Yum. And if you are looking for a little comfort food, try these Mexican Stuffed Shells by Like Mother, Like Daughter (feel free to make an extra pan for me!). I think I’m feeling a fiesta coming on. Ole!
As you all probably know, both Holly and I work full time. Both of us manage families (we each have 2 kids) and crazy schedules including an infant (Holly) and a teenager (me). Sometimes we just need some comfort. A whole lot of comfort. Check out this filling, comforting, vegetarian recipe of Smoky Tomato Lentils cooked in Coconut Milk by Heartbeet Kitchen. Bonus: a beautiful piece by Amanda Paa about the comfort of coming home and cooking in your own kitchen. And if lentils aren’t your thing, no problem, we still have you covered. Head over towards Sweet and Savory by Shinee to indulge in these Cheesy Homemade Tator Tots. Baked or fried-we won’t judge!
So, back to the fact that it is finally spring. Bring on the vegetables. I can’t lie, I’ve never cooked with fresh artichokes, but that is definitely going to change this weekend when I make these Baked Artichoke Hearts from Crunchy, Creamy, Sweet. Go on over and have a look at the photos and I bet you’re going to want to make them too!
Speaking of vegetables, this beautiful caprese inspired Tomato, Basil and Mozzarella Pasta Salad by Baker by Nature will help you get your fill. Perfect for a early summer dinner on the deck. With a glass of Prosecco. Or two.
You didn’t think we’d forget dessert did you? A Good Food Reads without dessert? Heck no! Not while I’m still here! I must admit I have never made a homemade Angel Food Cake, but let me assure you, that will be changing soon. Check out this tutorial for making your own homemade Angel Food Cake by The First Years. Just in time for Mother’s Day. Your mother will thank you! And if your mother needs chocolate (like I do) then maybe these drool-worthy Chocolate Peppermint Cups by Cookie and Kate will do the trick. Just remember your mom is worth it!
And for a few more desserts check out the lovelies featured in our graphic today: clockwise from top left: Pomegranate Lime Sorbet, Easy Glazed Lemon Bread, Peanut Butter Cup Bars, and Salted Caramel Sauce, all from our own blog!
Finally, last but not least, as the weather heats up we are going to need refreshments in the truest sense of the word. What could be more refreshing than popsicles? Specifically these Pineapple Cucumber Mint Popsicles by The Butter Half. Good Food Reads Mic drop.
What things are you looking forward to making in your kitchen this weekend? Let us know!
