This time of year, we all want to have a little of the luck of the Irish in us, right? With shamrock shakes, green beer, and corned beef hash on menus seemingly everywhere, it sometimes feels like the entire world – regardless of borders! – is Irish for one fun day (and possibly late night!). If you’re looking to celebrate St. Patrick’s Day with some fun and tasty food, look no further than this week’s Good Food Reads. We’ve got a collection of traditional and Irish with a twist recipes perfect for an Irish themed feast!
Wanna start the party with a fun twist on the St. Patrick’s day theme? Why not give these Green Pancakes at try? The ingredients are a bit interesting (spinach and mint, anyone?) but I think they sound delicious!
I love this twist on Irish Soda bread. Traditional currants and carraway are folded into a breakfast or high tea classic: Irish Soda Scones.
Another fun twist on a classic? Rosemary Cheddar Irish Soda Bread. I’m pretty sure this one will be a hit anywhere.
If you’re going to make a St. Patrick’s Day feast, you can’t leave out the Corned Beef and Cabbage. Be sure to make enough. Leftovers are amazing!
Of course, if you need something in a pinch, this Instant Pot Beef Stew should do the trick. I might try adding a little Guinness at the end for some more Irish flavor.
Speaking of Guinness, if you haven’t yet tried our very own Chipotle and Stout Chili – it’s a great use for Guinness and is an easy, tasty recipe to feed a crowd or a hungry family. It would be great with the Rosemary Cheddar Soda bread.
Another St. Patrick’s day classic is, of course, Shepherd’s Pie. I’m hoping to try this recipe from Melissa D’arabian.
