If you’ve been reading With Two Spoons (and Good Food Reads, in particular) for any amount of time, it’s likely no secret that I am a huge fan of One Pot meals. As a full-time working mama of two kids four and under, I’m all about being able to make meals for my family that are tasty and easy and involve minimal cleanup, especially on those crazy nights where both kids need baths and we parents are t.i.r.e.d. Slow cooker, InstantPot, sheet pan, or dutch oven? Doesn’t matter. Love them all. So this week on Good Food Reads, I’m sharing my latest list of One Pot Wonders I’m itching to try. I’m off this weekend and hosting a birthday party for my baby girl (how in the world is she one already!?!?) so I’m going to need an easy dinner for Sunday. I’m thinking this slow cooker Buffalo Chicken Chili should be just the ticket. I love buffalo wings but they are so very messy. This genius recipe takes out all the mess and leaves in all the flavor. I’m also going to harvest the last few jalapeños from the plant my four year old grew all summer! He did such a great job and loves picking the peppers and seeing them used in our family dinners. Since we’re still working on meatless mondays, I’m hoping to make this Spicy Thai Curry Soup with Roasted Jalapeños next week. It’s a vegan one-pot option!
Of course, I’d be completely remiss if I didn’t mention the fantastic One Skillet Apple Bourbon Pork Tenderloin that we featured last week. Have you guys tried it yet? It’s so darn good!
Ok, so technically this isn’t quite a one pot dish (you need to roast the squash in the oven) but the rest is all done in a dutch oven and I have a squash I want to use up so….here it is. Chickpea Tagine with Roasted Delicata Squash from Alexandra’s Kitchen.
Also, I consider the Instant Pot to be well in the realm of one pot dishes so how could I not mention this new recipe for InstantPot Mac and Cheese from Pinch of Yum? My kiddos love mac and cheese and I love anything that makes dinner easier so this will be a match made in carbohydrate heaven.
If you want something cheesy but maybe just a little more virtuous? Try this Slow Cooker Quinoa Enchilada Casserole. It’s on my meal plan for the week!

You don’t typically see a lot of one pot (or one bowl, in this case!) dessert recipes but I’ve found one for you: One-bowl Zucchini Pumpkin Cake and Brown Butter Frosting. Yum!
