It has been a crazy busy week, as most of them are towards the end of the school year. My kids don’t have their last day of school until next week, but the past two weeks have been chock full of end of the year parties, teacher gifts, graduation festivities, end of the year orchestra concerts, dance recitals, and let’s not forget the never ending soccer games! When you put that on top of a full time work schedule, well…whew, I’m starting to get tuckered out! And I must admit my belly is growing very tired of all of the fast and fast casual food we’ve been eating (not to mention guilty) as we fly around from one activity from another. It’s time to reintroduce vegetables and clean eating to our diets. These salads we’ve found all over the internet will be a great way to start that process…and they are anything but boring! So keep reading for a Good Food Reads dedicated to salads!
So let’s get started with this unbelievably gorgeous and refreshing Fresh Watermelon Summer Salad by The Butter Half. Watermelon paired with blueberries, cucumber and feta. Totally detoxifying. I can’t wait to make this one this weekend!
Now I’m not one that gets very excited about raw broccoli, but Taylor at Food Faith and Fitness may be changing my mind. Greek Healthy Broccoli Salad comes complete with a lemon cashew dressing. Yes Please. Plus her writing is always worth a read!

So there is a restaurant here in my suburb of Minneapolis that serves a BBQ Chicken Salad that I regularly crave. And although I love going out and eating this salad (especially if I’m sitting out on their beautiful patio and enjoying happy hour), there are many times when I’d much rather make this at home. This BBQ Chicken Salad by Damn Delicious looks so similar, I bet I can now host my own happy hour on my own beautiful patio! YAY!
Now I may or not have an obsession with the BLT sandwich. (Bacon, Lettuce, and Tomato…and I wouldn’t be at all opposed to adding an avocado as well…but I digress). This BLT Pasta Salad by Crunchy Creamy Sweet sounds like it would bridge the gap between foods I really love and the world of the salad. And of course I love this because it contains PASTA. Enough said.
Because there is never enough bacon, check out this Honey Mustard Chicken Avocado Bacon Salad by Cafe Delites. There is just so much to love about this salad. Although the name of the salad is quite a mouthful, I think that a mouth full of this salad may be nirvana. Or heaven. Or just pure deliciousness.
Let’s go back to watermelon. To me it is the perfect summer ingredient. All summer I can’t get enough. And according to weight watchers it is a ZERO point food! SCORE! This Fresh Watermelon Mozzarella Salad by Domestically Blissful pairs it with arugula and almonds for the perfect summer lunch. Count me in.
