The start of a new school year and the end of summer is a busy and exciting time. It also means that mornings can be a lot crazier as we all slowly get back into routines. Getting a healthy breakfast into my family before they start the day has always been a little bit of a challenge (especially since I’m not a morning person!). These easy, back to school breakfast ideas will surely help ease the morning chaos.

MUFFINS
Muffins are such a great, grab and go option, especially when made ahead of time and frozen. A lot of commercially prepared muffins are loaded with sugar (and let’s face it, are really more of a breakfast cupcake!). I love to sneak extra nutrients into my muffins and my kids are none the wiser. Prep a batch or two of muffins on the weekend, throw them in the freezer, and either quick thaw in the microwave in the AM or set them out the night before and you’re good to go.
Apple Zucchini Toddler Muffins
These mini muffins are perfect for even the littlest kids. Loaded with fiber and even veggies, they are perfect for breakfast or snack. I love to make a double batch to keep in the freezer.
The easiest muffin recipe ever. Toss everything in the blender and you’ve got muffin batter in about 4 minutes flat. Naturally sweetened with honey and dates, these are gluten free and have minimal refined sugar. They also freeze well.
