Happy Friday, friends. I know we didn’t really fall in line with the New Year, healthy everything program on Tuesday (if you missed it, check out our Cheesy Artichoke Dip!) but we’re back today with a great list of some of our favorite recipes for those times when we really want to put extra focus on healthy, nourishing foods. The New Year is so often a time for great diet and fitness resets and it’s also a really busy time – coming back to work or school after the holidays is no joke! Combine that with needing to make healthy foods and fit in some exercise and I love to have a handful of easy to prepare, portable foods to make. This week’s Good Food Reads: A Healthy Start is packed full of recipes to take you through your day in a healthy, happy way!
One of the easiest ways to pack in nutrition on a busy morning is to make a smoothie. Infinitely customizable, smoothies really are my quick breakfast champion. I love our Chocolate Peanut Butter Smoothie or this gorgeous Layered Immunity Boosting Smoothie from How Sweet Eats.
Another favorite – and also easily portable – breakfast is greek yogurt with granola. You can definitely buy great quality granola at the grocery store these days but making your own is super simple and the results are SO worth it. One of my favorites is Nekisia Davis’ Olive Oil and Maple Granola from Food52 or our fun Tropical Granola with Macadamia Nuts. Make a big batch on a Sunday night and you’ll have fresh granola all week!
Healthy, on-the-go lunches can be a bit tricky at times. I love to make this Crunchy Cashew Thai Quinoa Salad with Ginger Peanut Dressing from Ambitious Kitchen to bring to work. It’s so satisfying and packed with nutrition. I’m hoping to make a batch of this Broccoli Salad (from Cookie + Kate) this week, too!
One of my absolute favorite healthy meals is soup. Warm, comforting and easy to pack with veggies, they’re also great options to make ahead and just reheat when you’re ready for a healthy meal. Have you tried our Instant Pot Chipotle Black Bean Soup or our Easy Slow Cooker Chicken Noodle Soup yet? I’m going to try this Curried Red Lentil Soup with Greens from Dinner: A Love Story.
Finally, I can’t wait to give these Yummy Salmon Burgers with Slaw from Pinch of Yum a go for dinner. A common last minute dinner in our house is grilled salmon burgers (we use these from Costco – so good and wild and sustainably fished!) drizzled with gochujang sauce (I’m addicted) and served with salad and these quinoa rice packs, also from Costco. My kids and husband love it. I’ve never tried making my own salmon burgers though so I’m looking forward to giving it a try.
