Day 15 of the Whole 30! I’m still alive and even starting to enjoy it. I won’t lie, I’ve struggled at times and I would give my right arm for a taco (glass of wine, piece of bread, Ritz cracker…), but its finally looking like I’m going to make it. Turns out this clean eating thing can actually taste pretty darn good. Lean protein, fresh vegetables, fresh fruit, and this Apple Brussels Sprouts Salad.
Since this is a whole new way of eating for me, I’ve really had to plan ahead. Sure, I know about nutrition, but I’ve really let my busy life dictate my diet and that has not been good for me from a health perspective. Whole 30 is changing my tastes and showing me that eating clean does not need to be boring, bland, or difficult.
My life saver during this Whole 30 has been recipes that leave leftovers. Both my husband and I have found that the key is having a full refrigerator. Hard to go off of the deep end when there is so much good stuff available. And this Apple Brussels Sprouts Salad? Makes enough for several lunches. Or lunch for both of us. Or lunch and dinner! Crunchy and full of protein, it’s actually pretty filling. And healthy? Yes!
You may be saying “Brussels sprouts? Really?”. I didn’t believe it either. But this Apple Brussels Sprouts Salad is a little crunchy, a little salty, a little sweet. Hits all of the high notes and holds up well in the refrigerator. Take it to work. Make your co-workers jealous and tell them you got it from us.
Brussels Sprouts Salad- Whole 30, Paleo
Adapted from a recipe first found on Pinch of Yum, this salad was bulked up a little to serve as lunch, and altered a little to make it Whole30 compliant! If you aren't following Pinch of Yum you sure should be!
When making this salad be sure to use Whole30 compliant bacon and Whole30 compliant cashews! (I found mine at Lakewinds Coop, but they are also available at Whole Foods).
Ingredients
Dressing:
- 1/4 cup orange juice
- 1/3 cup lemon juice
- 1/4 cup apple juice
- 1/4 cup shallot finely chopped
- 1/2 teaspoon salt
- 1/2 cup olive oil
Brussels Sprouts Salad
- 18 oz shaved brussels sprouts (2 9ounce bags of the preshredded brussels sprouts works great!)
- 7 pieces of bacon cooked, drained, and crumbled
- 1/2 cup slivered almonds
- 1 cup cashew pieces
- 1 apple sliced thin and then diced into bite sized pieces
Instructions
Dressing

Place all ingredients into a glass jar. Close lid tightly and shake to mix.
Brussels Sprouts Salad

In a large bowl, combine shaved brussels sprouts, crumbled bacon, almonds, cashews, and apples.

Drizzle with dressing, toss to combine, and allow to sit at least 20 minutes prior to serving.

Serve and enjoy.
