Carrot Zucchini Fritters with Lemon Basil Aioli (Whole 30, Gluten Free)

Does anyone else out there subscribe to a Community Supported Agriculture (CSA) share?  I get one through a local farm (Featherstone Farms, I love you!), and when I pick up my box of fresh vegetables each week, I get really excited about all of the amazing things that I am going to make.  Perfect heads of lettuce, deep purple eggplants, bright green peppers, sweet yellow corn.

This year I’ve been getting a lot of carrots and zucchini in my boxes, which just so happens to be the perfect combination for making these Carrot Zucchini Fritters with Lemon Basil Aioli.

Waldorf Chicken Salad (Whole30)

Although my Whole30 is done (how can you stick to Whole30 in Napa?  I mean WINE…!), I am still trying to stick to clean eating while at home.  I’m also trying to keep planning foods to bring to work.  This Waldorf Chicken Salad ticks all of the boxes.  Fresh, crunchy, creamy, Whole30 approved.  Perfection!

Shakshuka (Whole30, Vegetarian, and How to Impress Your Date)

The end of the Whole30 is near.  Just a few short days left.  Friday I will share with you what I’ve learned (and it’s a lot!), but for today, I will say the Whole30 has brought up a ton of eating/food/cooking conversations that have have got me thinking.  I’m a physician and while at work the other day, my college-aged scribes had been asking me about easy, college approved dinner recipes (preferably with leftovers) that would not break the bank.  Although I agreed to tackle that one (coming soon) I also got to thinking…how can these guys impress their dates?  (We didn’t actually TALK about this part of their lives at all-and I can feel them blushing as I write this, you never know when this advice will come in handy!)  Which then led me to remember how my own husband made me dinner while we were dating… which leads to Shakshuka (Whole30, Vegetarian, and How to Impress Your Date) and a few funny photos!

Apple Brussels Sprouts Salad

Day 15 of the Whole 30!  I’m still alive and even starting to enjoy it. I won’t lie, I’ve struggled at times and I would give my right arm for a taco (glass of wine, piece of bread, Ritz cracker…), but its finally looking like I’m going to make it.  Turns out this clean eating thing can actually taste pretty darn good.  Lean protein, fresh vegetables, fresh fruit, and this Apple Brussels Sprouts Salad.

Dutch Oven Roasted Chicken

Happy New Year! 2019 is here!  And so is our Dutch Oven Roasted Chicken!

Have I mentioned that I’m doing the Whole 30?  I can’t even really tell you why (because I’m not really sure), other than I wanted a challenge.  And for my carb addicted, cheese loving, Taco Bell going self, this might be the ultimate challenge.  But who knows, maybe I’ll find that I love it and my body loves it and I feel great and…well, hopefully I’ll survive anyway.  My stubborn nature will definitely come in handy here.  Thanks to my husband (who wasn’t given a lot of choice) and my friend, Lynnea, who are going to be my main source of support and have agreed to do the Whole30 with me.  And you.  I’m sure you all will support me.  Right?  Starting with this Whole 30 compliant Dutch Oven Roasted Chicken.
