I’m going to be very honest with you. There is no real theme for this week’s Good Food Reads. And I’m 100 percent ok with that. What we do have is a collection of really good recipes from around the blogging world to hopefully fill your kitchens this weekend. I’m gearing up for a busy work weekend so I’ve selfishly included a number of easily portable, healthy salads. Similarly, I am planning to reinstate meatless Monday at my house and so I’ve dug up a tasty looking vegetarian soup recipe that I’m excited to try. What are you cooking this weekend? It’s asparagus season!!! Otherwise known as the time of year my husband will actually eat vegetables. So, these gorgeous Pesto and Ricotta Filled Asparagus and Radish Tarts are happening in my house ASAP.
I’ve fallen off the #meatlessmonday habit lately and I would love to get back into it. Filing this recipe for Curried Chickpea and Lentil Soup here for inspiration.
Last night I made these great Oven Fried Honey Sriracha Chicken Drumsticks. They were super easy and had such great flavor! My husband and son ate them right up.
Do you guys love wild rice? It’s definitely a Minnesota staple but if you haven’t had it before, please give it a go. It is SO good. I’m hoping to make a batch of this Chopped Chicken Wild Rice Salad + Balsamic Lemon Cilantro Dressing. I think it would be a great, portable meal for work!
My husband loves funfetti cake and just so happens to have a birthday coming up. I usually make him Ina Garten’s Double Chocolate Layer Cake (and if you haven’t had it – pleeeease go make it now. It’s amazing) but I’m thinking these Funfetti Cake Batter Waffles might be a fun little breakfast surprise!

Cranberry-Almond Broccoli Salad. A lightened up version of the potluck classic. Also a great option for a make ahead portable lunch.
