Growing up, I wasn’t much of a morning person. Truth be told, I’m still not much of one now. When I was little, my parents knew to give me some space in the morning. Quiet time to ease into the day. In addition to some quiet time, I usually didn’t want to eat breakfast right away. I’m not sure why, since now breakfast (and coffee!) is one of my favorite meals of the day. I love the wide range of breakfast treats, from sweets and baked goods, to savory omelets and – of course – bacon. My one regret from my vegetarian days really is that I missed out on many years of bacon! As we approach the Easter weekend, I’ve been planning our Easter breakfast menu and it got me thinking about and searching for some new and fun breakfast recipes to try. I thought you might like to try some, too. It’s Breakfast Time on Good Food Reads and I think you’re going to love it.
Savory Chicken, Egg, and Sausage Cheese Muffins are first on my list. If you’re looking for something keto and/or low carb these definitely fit the bill. I think they will be perfect for easy, healthy on the go breakfasts! Can’t wait to try them.
My husband and I love Hawaii. It is absolutely our happy place. I love the sun, the smells, the ocean, and the food. This Tropical Acai Bowl is on my list to make for those mornings when I really just need to pretend I’m back in the pacific. Sigh…
Now, for something a little less healthy but definitely with a whole bunch of yum: Bacon Breakfast Pizza. I can’t even start with this one, y’all. How good does it look?
Also, these Ham, Egg, and Cheese Brunch cups would be perfect for Easter or any weekend brunch!
For a fun, fancy-feeling breakfast, I’m thinking this Almond Dutch Baby with Honeyed Kumquats would be amazing. I love anything that uses a cast iron skillet for breakfast!
Speaking of cast iron skillets, I’m super excited to give these Vegan Breakfast Skillets a go. The combo of so many yummy veggies and great spices will be a welcome healthy addition to my breakfast recipe rotation.
Do any of you have a juicer? Do you love it or does it just take up space in your kitchen? I’ve been toying with getting one and recipes like this Golden Glow Juice make it so tempting.
For those times when I need some spicy in my breakfasts, I’m tucking away this recipe for Breakfast Enchiladas. I’m betting they’re perfect with a bloody mary!
Finally, I can’t forget to mention some of our favorite recipes for breakfast: A Southwestern Frittata, Maple Granola with Quinoa and Cranberries, Instant Pot Maple-Apple Oatmeal, Apple French Toast Bake, and Vanilla Cardamom Waffles. Check out all of our breakfast recipes right here.
As always, friends, I hope you find a new recipe to add to your favorites. We would love to share your recipes here on GFR, too, so send us your suggestions! And to those who celebrate, Happy Easter weekend.
