Since welcoming my daughter in October, I’ve been on a bit of a mini-maternity leave from the blog, focusing mostly on Good Food Reads each week while Lane (bless!) has really taken over the cooking posts. As many of you know, having a newborn really limits the time for cooking and kitchen shenanigans. Well, I’m starting to slowly dip my toes back into the land of the cooking! As I think about things that I’m excited to make (and combine that with the constant hunger associated with nursing a baby – wow! I could eat ALL THE TIME), I continually get excited about Good Food Reads and have found so many things I want to share.
I’ll be honest with you, there is no real cohesive theme to this week’s picks. Just yummy food, pretty pictures, and a helpful article on uses for my favorite kitchen tool: the classic sheet pan.
I hope you find a new treasured meal or tip! Let us know what you’re loving this week on twitter, facebook or instagram! With that said, here we go…
Lemon Bars with Olive Oil and Sea Salt or Shrimp and Pineapple Skewers with Peanut Sauce (Melissa Clark via NYT). If you guys don’t subscribe to the cooking email newsletter from the Times, you really need to. It’s filled with gems! These lemon bars are DIVINE and I am really excited to make the shrimp and pineapple skewers for my preschooler.
Another pick from the Times this week is Chicken Tarragon Pot Pie (Julia Moskin/NYT). It reminded me of Lane’s great recipe for One Pot Chicken Tarragon, which you can find here. Just really, really good food here, people.
I’ve been on a bit of a kitchen minimalism kick lately, cleaning out cupboards and getting rid of unnecessary or unused tools. One thing I still stock up on though? Sheet pans. Here are 11 Unexpected Uses for a Sheet Pan (Food Network). Love it!
Chicken Enchilada Pasta (Better Homes and Gardens). An easy, crowd pleasing dish that would be great for a playoff game Sunday (go Pats!).
Shrimp and Sausage Gumbo – an InstantPot Recipe!! – from A Calculated Whisk. I’ve been expanding my InstantPot repertoire and I can’t wait to try this gumbo recipe. Sounds perfect for serving with a loaf of crusty bread and some really good butter. I imagine this is one of those recipes that is better the next day so maybe double it for tasty leftovers!
I’ve only recently come around to the idea of meatloaf. As an ex-vegetarian, it always creeped me out a little to eat a meat cake. Then I read Deb Perleman’s commentary on meatloaf in her genius Smitten Kitchen cookbook. She points out that meatloaf is basically just an oversized meatball – and that I could get behind. With that in mind, I’m excited to try this Cheddar Stuffed Sweet Potato BBQ Turkey Meatloaf (Ambitious Kitchen). It would be awesome with some polenta!
While cleaning out my pantry last weekend, I discovered a neglected stash of organic pumpkin. One of my goals for 2017 was to really use what is in my pantry and a simple search for pumpkin recipes led me to these Pumpkin Scones (The Vanilla Bean Blog) from local genius baker Sarah Kieffer.
Green Curry Noodle Soup (Spoon Fork Bacon). I’m adding this gorgeous looking soup to my weekly meal plan to feed my soup addiction. My husband is a bona fide mushroom hater so I’ll have to leave those out. And I’m a little on the lazy side so I might try store bought green curry paste. Don’t tell!
And finally, because I have two young kids and the hot ramen place in town doesn’t take reservations: How to Make Restaurant Quality Ramen at Home (Camille Styles).
