Hello Summer, beautiful Minnesota Summer! After surviving the months of frigid cold and snow, Minnesota shows it’s amazing summer beauty with gorgeous temperatures, amazing greenery and sunny days. And ya you betcha- these long Minnesota summer days come with glorious Minnesota summer food! Grilling, farmer’s markets, backyard gardens…all of the fresh flavors of summer!

I’m going to be very honest with you. There is no real theme for this week’s Good Food Reads. And I’m 100 percent ok with that. What we do have is a collection of really good recipes from around the blogging world to hopefully fill your kitchens this weekend. I’m gearing up for a busy work weekend so I’ve selfishly included a number of easily portable, healthy salads. Similarly, I am planning to reinstate meatless Monday at my house and so I’ve dug up a tasty looking vegetarian soup recipe that I’m excited to try. What are you cooking this weekend? Here’s my wish list:

It’s asparagus season!!! Otherwise known as the time of year my husband will actually eat vegetables. So, these gorgeous Pesto and Ricotta Filled Asparagus and Radish Tarts are happening in my house ASAP….

Cherry Rhubarb Crisp

You know those friends who have your back? Those friends who, when you hint that you might be able to use some of the extra rhubarb from their garden, give you not only rhubarb, but also a split of their rhubarb plant to plant in your own garden? Well, Amy and Peter are those friends. Amy recently gave me a whole arm load of rhubarb, not to mention a rhubarb plant that then got planted in my backyard! The only thing Amy asked in return was to see what I made with the rhubarb. Well, that sure was easy, I made this Cherry Rhubarb Crisp! So now my WHOLE family thanks you, Amy and Peter!…

My Grandma Dotty, whom I call Bestemor (the Norwegian word for Grandma), is the most amazing cook. I consider many of her recipes to be the tastes of my childhood.
