Easy Honey Cardamom Cashew Butter

Sometimes, the simplest recipes really are the best recipes. No fuss and full of flavor? I’m totally on board. Recently, I had a craving for cashew butter but didn’t want to run to the store and really wasn’t excited about dropping $12 on a jar of nut butter. Digging in my pantry, I found a bag of cashews I had picked up the week before and I decided I was going to take matters into my own hands. A few short minutes later, our Easy Honey Cardamom Cashew Butter was born.

With only 5 ingredients and no cooking required, this cashew butter is about as easy as it gets. In less than 10 minutes, you can have a jar of creamy cashew butter ready to devour by the spoonful or plop onto some toast or a bagel. Simply grab a cup or two of roasted cashews and a good food processor or high speed blender (like a Blendtec or Vitamix). After a quick pulse or three in the food processor with a few spices (in this case, kosher salt and ground cardamom), we add a little honey for sweetness and set the food processor to run on until the nuts and spices blend into a smooth, creamy butter. If you’ve been reading our blog for a while, you might know that I used to be a vegetarian. I stopped eating meat in middle school and didn’t venture back into omnivore land until just before I got married. Whipped Goat Cheese Cups with Honey and Pistachios

If there’s one theme to my cooking this time of year it’s this: easy appetizers. The holidays bring so many wonderful gatherings of family and friends and I love having a few go-to recipes to make entertaining in this busy season just a little easier. I’ve gathered some tricks over the years: A good cheese board is always a winner and the former vegetarian in me will forever love a beautiful platter of crudité with a special dip. I also love to have simple but elegant options like these Whipped Goat Cheese Cups with Honey and Pistachios. Baking Substitutions-A Science Project

A slight hiatus from our normal Wednesday Good Food Reads, which I promise will be back next week.

Recently my 14-year-old daughter came to me about a science project she was going to do for her 8th grade science class.  She had chosen to look at basic substitutions you could use while baking, as she is an avid baker. In fact I buy her a baking oriented cookbook every year for Christmas.  (Clearly I’m winning at parenting as I’m definitely reaping those rewards!).

She worked diligently on this project one fall afternoon at the cabin.  There was a lot of measuring, weighing, and even testing of resistance (it’s good to have a dad who is an electrical engineer and loves to teach scientific principle!). I had promised she could post her results on the blog when she had them written up, and now I am going to deliver.
