Baba Ghanoush: A Grilled Eggplant Dip

August 13, 2019 By Lane 1 Comment

My new title should be “Queen of the nondescript looking beige dips”.  But guys, this Baba Ghanoush is SO, SO good.  A little garlicky, a little lemony, and after all what else are you going to do with all of the eggplants that have come in your CSA this summer?  (no really, what ARE you going to do?  I need ideas.  Stat.)

Lemon Rosemary White Bean Dip

May 21, 2019 By Lane 4 Comments

Here in Minneapolis we finally saw our first 80 degree day.  Everyone flocked outside to take advantage of the amazing sunshine.  People congregated on driveways, at parks, around our 10,000+ lakes.  Just so dang happy to be outside!

But as the temperatures go up, and everyone gathers outside, snacks are needed.  Like this Lemon Rosemary White Bean Dip made with Fresh Crush Rosemary Olive Oil from the Queen Creek Olive Mill. Perfect for a summer gathering (or really ANY gathering).

Don’t trust me?  It’ll take you FIVE minutes to make it this delicious dip and you can see for yourself!

Easy Honey Cardamom Cashew Butter

April 16, 2019 By Holly Leave a Comment

Sometimes, the simplest recipes really are the best recipes. No fuss and full of flavor? I’m totally on board. Recently, I had a craving for cashew butter but didn’t want to run to the store and really wasn’t excited about dropping $12 on a jar of nut butter. Digging in my pantry, I found a bag of cashews I had picked up the week before and I decided I was going to take matters into my own hands. A few short minutes later, our Easy Honey Cardamom Cashew Butter was born.

With only 5 ingredients and no cooking required, this cashew butter is about as easy as it gets. In less than 10 minutes, you can have a jar of creamy cashew butter ready to devour by the spoonful or plop onto some toast or a bagel. Simply grab a cup or two of roasted cashews and a good food processor or high speed blender (like a Blendtec or Vitamix). After a quick pulse or three in the food processor with a few spices (in this case, kosher salt and ground cardamom), we add a little honey for sweetness and set the food processor to run on until the nuts and spices blend into a smooth, creamy butter. Try not to eat it all straight out of the processing jar!…

Simple Pico de Gallo

July 3, 2018 By Holly 1 Comment

Pico de gallo is one of my all-time favorite summer recipes. Now, I use the word recipe pretty loosely because it’s definitely a simple combination of foods, tossed together, and endlessly customizable. That being said, traditional pico de gallo is a fresh salsa (and is also sometimes called salsa fresca) typically made with tomato, onion, cilantro, jalapeño, lime, and salt. It is always coarsely chopped, never blended, and it’s uses are endless. Simple Pico de Gallo…

The Only Dill Dip You’ll Ever Need

January 30, 2018 By Holly 8 Comments

Are you ready for some football? If you are a football fan (and even if you’re not) you know that the Super Bowl is just as much about the food and the commercials as it is the big game. As a resident of this year’s host city and a Patriots fan by marriage, it has been non-stop Super Bowl talk around here for some time. While I’m hoping the Pats can pull off another win, I’m mostly excited about all of the yummy snacks that come with Super Bowl parties. And if there’s one snack that no party should be without, it’s a good dill dip. Am I right?

The Only Dill Dip You'll Ever NeedWell we’ve got the perfect, easy dip for you just in time for the big game. It’s full of flavor, easy to make, and is absolutely delicious on veggies, drizzled over baked potatoes, or eaten with a spoon. Friends, meet The Only Dill Dip You’ll Ever Need.  …

Fresh Summer Rolls with Peanut Dipping Sauce

August 15, 2016 By Holly 15 Comments

Fresh Summer Rolls with Peanut SauceHaving spent my teens and most of my twenties as a vegetarian (gasp!), I came to appreciate the beauty of an easily customizable recipe. Quick, customizable, fresh, and full of flavor, summer rolls are also perfect for those sticky dog days of summer when turning on the oven is the last thing you want to do!…

Greek Nachos with Tzatziki

July 1, 2016 By Holly 23 Comments

Greek Nachos with Tzatziki

I think it’s fair to say that (almost) everyone loves nachos. A staple at parties, most tend to lean toward the southwest in their flavor profiles – cheese, spicy meats, peppers, and salsa. This summer, we wanted to come up with a twist on the classic. Something a little lighter, with fresh, bright flavors but still a great party food that is easily assembled for even the most spontaneous of gatherings. Enter: Greek Nachos with Tzatziki….

Summertime Salsa

Summertime Salsa

I know, I know, I’ve written many times lately about the awesome weather we’re having here in Minnesota, but I just can’t say enough about it.  This past weekend we have truly entered patio season, and I am embracing it.  Of course as the weather heats up, and the sun begins to shine, my tastes trend towards those of summer-tomatoes, cilantro, onions, garlic…basically, salsa!…
