Creamy Goat Cheese Polenta with Roasted Tomatoes and Crispy Mushrooms

October 23, 2018 By Lane Leave a Comment

Traveling through Italy this past month made me think hard about the foods I want to be eating.  The Italians were so amazing at taking seasonal, local foods and making them a meal.  Their food has a simplicity that is often lacking in our culture.  Polenta was a food that was on a lot of Italian menus and I happen to love it.  As soon as I got home, I started working on my new favorite fall comfort food, which I have been eating on repeat.  Creamy Goat Cheese Polenta with Roasted Tomatoes and Crispy Mushrooms.

Whipped Goat Cheese Cups with Honey and Pistachios

If there’s one theme to my cooking this time of year it’s this: easy appetizers. The holidays bring so many wonderful gatherings of family and friends and I love having a few go-to recipes to make entertaining in this busy season just a little easier. I’ve gathered some tricks over the years: A good cheese board is always a winner and the former vegetarian in me will forever love a beautiful platter of crudité with a special dip. I also love to have simple but elegant options like these Whipped Goat Cheese Cups with Honey and Pistachios. They are simple to prepare, bursting with flavor, and require no extra silverware for serving! Win, win….

A Moveable Feast: Grilled Peach and Arugula Salad

July 26, 2017 By Holly 15 Comments

EDIT Web Grilled PeachWell, this is post is officially a day later than I had hoped but I guess that’s what happens when you head out of town and forget your laptop charger. Oops! With a few days away from work and no plans in hand, my husband and I made a last minute decision to head to his family’s cabin in the northern Minnesota lake country. We invited some friends to join us and had a great couple of days of sun, sand, water, and some good food. I love the simplicity of summer foods – marinades and grilled chicken or burgers, fresh fish, and plenty of salads. As part of our Southern themed dinner party earlier this summer, Lane and I tossed together this Grilled Peach and Arugula Salad to lighten up an otherwise heavy menu….

Oh, dear foodie friends. We have such goodness for you in this latest installment of Good Food Reads! As usual, we have scoured the internet and found a collection recipes and articles that are inspiring us currently and can’t wait to share them with you. Ready? I thought so. Here. We. Go….

A Guide To Pairing Wine and Cake. Because we all need a little more cake. And probably a little more wine!

Check out the gorgeous color of these Red Coconut Curry Meatballs with Cauliflower Rice. I’m planning to prep a batch for easy work meals this weekend!

Continuing my love affair with the InstantPot: Life Changing InstantPot Beef Stew from the lovely Lindsay at Pinch of Yum. Since we’re still working our way slowly into spring over here in Minnesota, this

Patio season is going to be here soon and I’m collecting cocktail recipes for entertaining. The latest addition to my list? The Ginger Rogers from Broma Bakery. With fresh ginger, grapefruit, and gin, how could it not be perfect?

Though we are nearing the end of citrus season, I’m still planning on getting in a batch of these Thick and Chewy Lime Bars with a Shortbread Crust. And I’m just aching to get my hands on some fresh rhubarb so that I can make these Roasted Rhubarb Scone Sandwiches with Vanilla Bean Glaze. Gorgeous.

Try this easy appetizer: Marinated Goat Cheese. Elegant and full of flavor. Another great spring option? Buttered Radish Tartines. The key is really good butter and a fresh, crusty bread loaf.

Are you a Trader Joes fan? I love picking up unusual items there and love seeing what others are buying. Here’s a list of 20 Things To Buy at TJ’s to save a little grocery cash.

This one’s for you, Lane: Smashed Grilled Sweet Potatoes with Chimichurri. Sounds like the perfect summer dinner!

And finally, I’m making a batch of these honey roasted strawberry muffins tomorrow morning to get me through my work weekend.

What are you lovelies planning to make this weekend? Let us know via instagram or twitter (@withtwospoons) or join us on Facebook! We can’t wait to see what you’re cooking!

Chimichurri Panzanella Salad with White Beans

Chimichurri Panzanella with White Beans

It’s March now and I’m SO ready for spring!  And of course, just as I had decided winter was over, Mother Nature goes and dumps a whole bunch of snow all over the Twin Cities.  The cold is back.  And although I know it will be short lived, it is still a bitter pill to swallow.  Since I really needed a bit of spring, I decided it was time to make a great salad.  You won’t believe what leftovers you can use to create something entirely new.  Chimichurri Panzanella Salad with White Beans is a bit of spring on a plate.   …

Asparagus, Goat Cheese, and Roasted Red Pepper Quiche

June 10, 2016 By Holly 2 Comments

Asparagus, Goat Cheese, and Roasted Red Pepper QuicheQuiche. I have a life long love affair with quiche and this Asparagus, Goat Cheese, and Roasted Red Pepper Quiche is my latest obsession.  My love for all thing quiche started when I was a teenager. Having stubbornly become a vegetarian as a pre-teen, eggs were a staple of my diet and one of the recipes that my (very understanding) mother came to master for me was a crustless vegetarian quiche filled with broccoli, cheese, and onion. It was always such a comforting and filling meal and I know my mom was thrilled that my meat eating dad and brother would devour it as well. …
