I feel like I should have titled this blog post “confessions of a food blogger” because I’m about to let you in on a dirty little secret. Are you ready? Here it goes: I am the parent of a picky eater. A really picky eater. Yes, that is correct. This food blogging mama has a little one who will barely eat anything resembling real food. She is my two year old, blonde, sassy little bit of dynamite who has a definite mind of her own, especially when it comes to food. She essentially has five approved foods: cheese, yogurt, bread, scrambled eggs, and pancakes. Anything outside those groups is almost guaranteed to be refused and so I’ve had to get creative in my cooking. I developed these Pumpkin Ricotta Pancakes to try and sneak a little protein into my girl’s favorite breakfast. Our whole family loved them and I thought you might, too!

With Christmas and New Year’s just around the corner, I have holiday entertaining on the brain. In addition to hosting a few Christmas parties, my husband and I usually have a small New Year’s Eve celebration with close friends. All of these gatherings are so fun, but planning so much food can get overwhelming. To keep it simple, I love to center the menu around heavier appetizers that are easily prepared ahead of time and endlessly customizable to the dietary needs and preferences of our guests. This year, I’m planning to make these Ricotta Toast with Caramelized Red Onion and Fig Tapenade for more than a few gatherings!

Good (Food) Reads: Strawberry Obsession
Confession: I’ve been on a bit of a strawberry bender recently. Our local Costco, in another glorious sign that spring is here (!), has had a bumper crop of perfectly sweet-tart organic strawberries in stock and I can’t. stop. eating. Breakfast, lunch, snacks, anytime. I love them on salads, in yogurt, or just by the handful. After a winter of starches and citrus, I’m so ready for spring and summer fruits! Sarah from Broma Bakery featured these Strawberry Nutella French Toast. I can’t wait to try them (the strawberry obsession continues) and actually think they’d be a great dessert topped with some crème fraîche and a little grated nutmeg….
