Edit: This recipe was originally posted in June 2018 and we are reposting today because well, life is busy, recipes sometimes don’t work out like planned, and mostly because this salad is just so darn good. Spring is finally on it’s way here in MN and I am craving all of the fresh veggies and fruit and this yummy salad combines the best of spring into one easy little package. Read on for the more info!! 

Friends, I have an important announcement to make: it’s time to toss out all of those bottles of store bought salad dressing. What kind of crazy talk is this? Hear me out. I know those bottles seem convenient and there are a million flavor options, but most are loaded with less than ideal ingredients, are expensive, and don’t ultimately taste that great. I promise you that with a few simple ingredients and less than five minutes, you can absolutely make a batch of homemade salad dressing that will taste twenty times better and elevate an everyday salad into something totally out of this world. Oh my friends, it’s November!  And although November certainly means cold, windy, dark days here in Minneapolis, November is completely redeemed by the fact that it brings THANKSGIVING  (my very favorite holiday ever). Thanksgiving means thousands of sides, desserts, and leftovers for days.  I make homemade rolls that serve as dinner rolls on Thanksgiving Thursday and serve as the backbone of the perfect turkey sandwich on Black Friday.  Leftover stuffing and mashed potatoes serve as a Black Friday breakfast that dreams are made of.  I know y’all are planning your own Thanksgiving feasts, so here are a few suggestions!

Happy Friday, friends! It’s the end of another work week over here at With Two Spoons and we are welcoming the weekend with some Good Food Reads. After a week of over indulging on Valentine’s sweets, I’m hoping to take my cooking and eating in a slightly more healthy direction this weekend. I always have such good intentions and then I find amazing recipes like the Whoopie Pies or fruit filled crepes and that plan goes out the window. Does anyone else have that problem?
