Spring is finally on it’s way here in MN and I am craving all of the fresh veggies and fruit and this yummy salad combines the best of spring into one easy little package. Read on for the more info!!
Friends, I have an important announcement to make: it’s time to toss out all of those bottles of store bought salad dressing. What kind of crazy talk is this? Hear me out. I know those bottles seem convenient and there are a million flavor options, but most are loaded with less than ideal ingredients, are expensive, and don’t ultimately taste that great. I promise you that with a few simple ingredients and less than five minutes, you can absolutely make a batch of homemade salad dressing that will taste twenty times better and elevate an everyday salad into something totally out of this world. Like so many others, I’ve become somewhat of an Instant Pot fanatic. When I first bought my Instant Pot, it sat in the box for about six months, coming out only to serve as a glorified rice maker. Now, don’t get me wrong, it’s a great rice maker, but I didn’t really appreciate just how great this kitchen instrument was until I started using it to fast track healthy dinners for my family. Over the past year, it’s become a go-to tool for soups, stews, roasts, and countless large batches of quinoa. I love that it allows me to produce meals that taste like I’ve been working on them all day, but in reality, came together in less than an hour. My latest IP favorite? Our epic 8 course dinner party (lovingly named A Moveable Feast) continues with this amazing Creamed Jalapeño Spinach. Truth is, I’m a relative newbie when it comes to creamed spinach. As a busy mama, I have come to really appreciate a quick, one-pot meal. Less pots = less clean up and more time with my family and these days, that is worth everything. This One Pot Pasta with Tomato, Spinach, and Mozzarella fits right into my crazy schedule and is gobbled up by my hungry husband and toddler alike. Filled with healthy ingredients available at any grocery store (in other words, I can grab everything in 10 minutes on my way home from work!), this pasta dish is hearty, healthy, and on your table in under 3o minutes.
