I know you’ve already heard about my great love affair with the Instant Pot.  I’ve gone and on about the magic of this kitchen appliance and as summer is coming I’m even more excited to have a great way to cook without having to turn the oven on and heat up my house.  But so many people are asking me-what are you actually making in it?  Certainly a good (and easy) way to start is my Instant Pot Chipotle Black Bean Soup (it’s even vegan), but if that isn’t your jam-then may I recommend what we’ve been eating on repeat?  Instant Pot Korean Inspired Pulled Pork. I learned about a new food this weekend and I thought it only fair to share it with you! (Especially since I was thinking: Where have you been all of my life?).  I had made my favorite sauce in the whole wide world (Cilantro Lime sauce, in case you missed the post) and was looking for something special to do with it.  Something my entire family would like.  Something that wasn’t my “same old”.  I found it in Pulled Pork Sopes, and we’ll be making it many more times in the coming months….

Chipotle Pulled Pork As you can imagine, any time Holly and I get together there is a lot of talk about food.  And none more than when we are planning a girls weekend at my cabin.  We knew it would be hot.  We knew our other partner in crime (Hi Em!) was coming with us and likely didn’t want to spend ALL DAY cooking.  We knew we wanted delicious food.  Enter Chipotle Pulled Pork Sliders, made in the slow cooker.  My favorite kitchen tool in the winter, it is also unbelievably useful in the summer.    Especially when you don’t want to heat up your cabin with the oven.  Especially when you’re going to want something amazing for dinner.  Especially when you want to spend the day outdoors, splashing in the lake and taking the boat out for a spin!…
