Lemon Herb Baked Tilapia

May 28, 2019 By Holly Leave a Comment

When I first started cooking, I will admit that I was a little bit afraid of making fish. I loved to eat it but making it at home was a whole different story. It seemed so complicated! With a thin line between under and over cooked and concerns about freshness (especially living in the midwest), it wasn’t something I thought of as an easy, weeknight meal option. Thankfully, a few years living in Boston, where fresh fish and seafood is abundant, shook me of that notion and now I love to make fish as often as I can. This Lemon Herb Baked Tilapia is the perfect recipe whether you are a fish expert or novice.

Instant Pot Thai Butternut Squash Soup

Winter is here in Minneapolis.  Oh sure, it’s not TECHNICALLY winter (which I’m reminded of frequently by my rule following 6 year old), but Thanksgiving is over, the cold has moved in, and it’s dark hours and hours before we go to bed.  (Notice I don’t say before I’m READY to go to bed…).  With the cold comes the need for soup.  Warm, comforting, fill-you-up soup.  Like this Instant Pot Thai Butternut Squash Soup. …

Instant Pot Korean Inspired Pulled Pork

April 18, 2017 By Lane 64 Comments

Instant Pot Korean Inspired Pulled Pork

I know you’ve already heard about my great love affair with the Instant Pot.  I’ve gone and on about the magic of this kitchen appliance and as summer is coming I’m even more excited to have a great way to cook without having to turn the oven on and heat up my house.  But so many people are asking me-what are you actually making in it?  Certainly a good (and easy) way to start is my Instant Pot Chipotle Black Bean Soup (it’s even vegan), but if that isn’t your jam-then may I recommend what we’ve been eating on repeat?  Instant Pot Korean Inspired Pulled Pork. (I DID include instructions to make this in the Slow Cooker/Crock Pot as well-just scroll all the way to the bottom.)…

Instant Pot Chipotle Black Bean Soup

April 4, 2017 By Lane 54 Comments

Instant Pot Chipotle Black Bean Soup

The Instant Pot.  It’s all you hear about these days.  But a pressure cooker?  I wasn’t sold.  And my husband was threatening me if I bought ONE. MORE. KITCHEN. GADGET.  But, me, being me, went ahead and got an Instant Pot (read further for my marriage saving advice).  And when I finally took my Instant Pot out of the box I found I just cannot stop using it.  This gadget is magical!  Pure magic!  If you don’t have one, it’s definitely time to go get one.  In fact, I like mine so much, I shipped one to my in-laws, just so I could keep cooking with it when we visited on Spring Break!

So, like any discerning person, I bet you are asking yourself-sure it’s great, but what are you actually making in it?  Well, this Instant Pot Chipotle Black Bean Soup for one.  You haven’t heard about the Instant Pot? Read further for some great information and this fabulous recipe!…
