Baked Honey Nut Chicken Tenders

November 12, 2019 By Holly Leave a Comment

Feeding kids can be a tricky endeavor. While some kids are born adventurous eaters, others (like my three year old) subsist on a tightly held list of approved foods. For whatever reason, most kids do seem to love chicken tenders. I’m not sure if it’s the crispy breading, the sweet, mildly flavored meat, or the fact that chicken tenders are often used as edible vehicles for a sweet dip of some variety. Our new recipe for Baked Honey Nut Chicken Tenders is a healthier take on that childhood classic – and is sure to thrill even the most picky of eaters.

Make Ahead Cinnamon French Toast Sticks

October 29, 2019 By Holly 3 Comments

As a busy, full-time working mama of two young kids, there is almost nothing I love more than meals that can be made ahead of time. The morning rush is tough, whether you’re 6 or 40 and having quick and easy breakfasts ready to go is a big priority in our household. These Make Ahead Cinnamon French Toast Sticks are just the ticket for breakfast in a minute that kids and adults will love.

Make Ahead Cinnamon French Toast Sticks

It may surprise that despite my food blogging hobby, I’m actually a relative newbie to the world of meal planning and freezer meals. As our lives have gotten busier with school, activities, and work, it really has forced me to be better prepared and make ahead meals are really the key for me.

Friday Five: All the Fall Break Things

October 18, 2019 By Holly Leave a Comment

It’s fall school break here in Minnesota and while Lane is off on a Chicago adventure (check out our InstaStories for fun highlights of her trip!), I’m soaking up a few days of fun, local fall adventures with my kids. Fall is always such a fun time – trips to apple orchards, cozy evenings by bonfires with friends, and lots of comfort food cooking. This week I’m sharing some things I’m loving this fall in our Friday Five: All The Fall Break Things.

Instant Pot Sweet Corn Chowder (Vegan, GF)

October 15, 2019 By Holly 4 Comments

Soup season is upon us friends, so let’s get cooking. I started working on this new recipe for Sweet Corn Chowder at the very end of summer. Despite temperatures in the upper 80s, every time I saw all that gorgeous corn stacked at the farmer’s market, all I could think about was crisp fall weather and comforting soup. It’s finally here and I’m certain this Instant Pot Sweet Corn Chowder recipe is about to be your family’s new weekday favorite.

Books, Books, Books! (And What’s on My TBR List for Fall)

October 4, 2019 By Holly 2 Comments

It’s time for another bookish post here on With Two Spoons. As you might know, we love books just about as much as we love cooking and so every now and then, we share what we’ve been reading and what’s on our TBR (To Be Read) list for fellow bookish foodies. Fall is often a big time for publishers. New titles from established authors tend to be released ahead of the upcoming holiday season so there is generally a lot to choose from. I’ve been in a bit of a reading slump lately and would LOVE to get some book suggestions from you all! This week, I’m rounding up what I’ve read lately and what’s next on my TBR list.

As mentioned above, I’ve been in a bit of a reading rut lately. The end of summer and start of the school year was a little crazy around here and my book habit definitely got pushed to the side. I’m really excited for some cooler weather and a slightly slower pace of things so that I can get back in the reading saddle. So what have I read lately? Here’s the run down…

Pumpkin Pecan Scones

October 1, 2019 By Holly 3 Comments

It’s pumpkin season, friends. This versatile little squash is probably best known for the eponymous seasonal latte and as a fall decoration, but I love to bake with it. From my Mother-in-law’s famous pumpkin bread to our pumpkin pancakes, pumpkin is a key ingredient in so many of my fall and winter recipes. This week I’m sharing our new recipe for Pumpkin Pecan Scones.

Fall means back to school, pumpkin everything, apple orchards and football. It also means those weekend game day parties are BACK and so are all of the great game day foods like wings, chili, and chips and dip. I love game day food but I don’t always love all of the processed, high sugar or high fat ingredients that many of them are often full of. Looking for a way to make game day food a little healthier? So were we. Here’s our list of Healthier Game Day Food! Just in time for the weekend.

Bailey’s Bread Pudding

September 17, 2019 By Holly 2 Comments

There’s something about the turn of the season that really makes me crave comfort foods for brunch. Or dessert. Or, really, just all the time (if I’m being honest). This Bailey’s Bread Pudding is the perfect make ahead comfort food for fall. Or winter. Or a random Saturday when you really need some carbs.

Jump to Recipe

Our Bailey’s Bread Pudding is a one dish, dump it and forget it type of treat. It’s fantastic for a lighter dessert and also really great addition to brunch. I suggest topping it with fresh berries and some sweetened whipped cream (or try our Bailey’s whipped cream to really do it right!).

The start of a new school year and the end of summer is a busy and exciting time. It also means that mornings can be a lot crazier as we all slowly get back into routines.
