I have total Olympic Fever and I’m going to apologize in advance if it means that this week’s Good (Food) Reads is a little shorter than usual. There are swimming races, gymnastics competitions, and beach volleyball to watch, right?!?! And honestly, I feel a little guilty posting such decadent recipes after watching the swimmers (#absfordays)! It’s Good (Food) Reads time again and I’m back from vacation and excited to share some great food inspiration with you all! After being away on vacation and not cooking for a while, I’m am ready to head back into my kitchen and try some new things. We love finding and sharing new recipes and videos with you, so if you have something you love and want us to share, be sure to send it our way! Oh, and one more thing – Lane forgot to mention that Monday’s post was our 100th! I can hardly believe we’ve already hit a fun little milestone. Thanks for following along. BLT Balsamic Chicken Avocado and Feta Salad (Cafe Delites) is pretty much the salad of my summer dreams. Does anyone else feel the need to detox with nothing but salads after a vacation? I just want to eat allllllll the greens. The avocado and feta doesn’t hurt one bit, though!
Summer Squash Pizza (Smitten Kitchen) makes me feel all virtuous about pizza. And using summer’s bounty of zucchini and squash. Plus, it’s Smitten Kitchen, which is pretty much a guaranteed winner in my experience.
I think this may blur the line with the whole salad thing but I don’t really care. I’m saving this one for a night when my hubby is gone as he hates nectarines (sad but true). Still, I’m really excited to try this Nectarine Panzanella with Homemade Garlic Croutons (My Kitchen Love)
Super Healthy Broccoli Salad (The Fed Up Foodie). Like I said, I can’t get enough of the salads right now!
Cheesy Jalapeno Bacon Meatballs (Hey Grill, Hey) because I can’t always be virtuous. Plus, my little guy loves meatballs and this sounds like a fun take on a classic.
Frozen Peach Lemonade (As Easy As Apple Pie). Without vodka for now. With vodka later. YES.
Healthy Hawaiian Chicken Noodle Bowls (Fit Foodie Finds). My husband and I just returned from Hawaii and I can’t wait to make these noodle bowls from MN fave Fit Foodie Finds.
Challah Donuts (Molly Yeh). Because seriously, CHALLAH DONUTS. I can’t even. Someone please make these for me? Pretty please?
Blueberry Caprese Salad (Floating Kitchen). Love this take on a caprese. I’m still devouring blueberries like there’s no tomorrow and this will be a fun twist on a classic summer salad.
Brown Rice Pilaf for Instant Pot (Mel’s Kitchen Cafe). Do you have an InstantPot? I am trying to find more and more recipes to take advantage of the crazy time savings with pressure cooking. This brown rice pilaf seems like a great place to start.
Asian Turkey Burgers (Andie Mitchell). I am on a quest to find a flavor filled turkey burger that doesn’t dry out and definitely doesn’t serve as a meager substitute for a traditional burger and I have high hopes for this one.

Hello, friends! Welcome back to Good (Food) Reads. It’s hard to believe another week has passed and after a gorgeous, long, holiday weekend I’m actually finding it a little hard to be excited about food – I’m still SO FULL. But, for those of you who are ready to dive back into your kitchens, here’s this week’s collection of web inspiration that we call Good (Food) Reads.
For cooling off on those hot summer afternoons (and a perfect non-alcoholic option for parties!), I am really excited to try the Pineapple Mint Cooler from Honestly Yum.
Similarly, this Summer Bliss Juice from The First Mess sounds perfect for happy hour. I’ve been on a real watermelon kick lately so this one is right up my alley.
In a slightly less “healthy” direction, I’m planning on whipping up a batch of these Magic 5 Cookies later this week. We’re having some work done on our house and I think it will be a great treat for all the workers, or as my son loves to call them, “construction guys.” (Recipe via Sally’s Baking Addiction)
And since I am on the subject of sweets, has anyone tried these Peach Creamsicles from Meaningful Eats? They are vegan and dairy free, which basically negates the calories, right?!?!
As we really head into the heat of summer (yes!), I’m always looking for lighter dinner options. I am thinking these Turkey Thai Peanut Lettuce Wraps (The Creative Bite) or Grilled Monterey Chicken (A Kitchen Addiction) would be fantastic weeknight options. What are your favorite light(er) summer dishes? The Fed Up Foodie also posted a recipe for Mediterranean Tuna Salad that is calling my name…
Because of our construction project, grilling will be a little challenging the next few weeks. This One Pan Lemon Parmesan Chicken and Asparagus (Chelsea’s Messy Apron) could be a great and easy oven friendly option. Plus, limited clean up! Total winner already in my book.
And because I can’t pass up a good quinoa salad, I’m itching to try Cookie + Kate’s Sundried Tomato, Spinach, and Quinoa Salad.
Finally, I’m putting this out here really so that I can find it later! I’m always looking for new meals to bring to new parents and here’s a great compilation of ideas from The New York Times: Almost As Good As A Full Night’s Sleep – 26 Dishes to Cook for New Parents.

This upcoming holiday weekend is a big one in my family. Each year we gather at my grandmother’s lake cottage and spend at least 3 days eating, swimming, boating, and relaxing by evening bonfires. It is heaven. And we are always looking for new foods to try out on the ever expanding family. With that in mind, here are this week’s Good Food Reads! Enjoy.
Olive Oil Zucchini Bread, perfect for that summer bumper crop of zucchini that is on the way.
Mark Bittman’s Salmon Burgers. Because sometimes you just need to mix up the summer grill. I think these sound perfect for the holiday weekend!
To serve with the Salmon Burgers, a French Potato and Green Bean Salad. Otherwise, try our Chipotle with Adobo Potato Salad.
Momofuku’s Soy Sauce Eggs. I’m completely intrigued by these. Has anyone tried them?
I do love a good Cooking Light recipe when trying to be mindful of calories. Here’s a Sausage, Shrimp and Quinoa Skillet that looks amazing!
Speaking of shrimp, I can’t wait to make this Hot Honey Shrimp. I’ve been so into the spicy, spicy foods lately and this one seems right up my alley.
Simplest Cabbage Slaw, via Alexandra’s Kitchen. Perfect for all those CSA boxes!
And another classic from Alexandra’s Kitchen, Zucchini Bread. I love to double the batch and freeze some for later!
Loving this collection of 10 Vegetarian Recipes from Love + Lemons. I’m filing it away for Meatless Mondays! I’m especially excited about the orzo stuffed peppers. Yum.
Two Bean Summer Vegetable Chili. Because even though it’s 90 degrees out, I still could eat soup/chili all day, every day. This is a light and summery take on a classic.
Also curious about this Curried Fried Rice. Would be great for leftover rice or maybe even quinoa!
I had this post all ready to go and then I got an email from Better Homes and Gardens (random, I know) with Copycat Recipes That are Better Than the Originals. I can’t wait to try the DQ Crunch Cone dupe, the At Home Animal Style Fries, and the Dole Whip! Yum.
And finally, Layered Buffalo Chicken Dip. Because it’s a holiday weekend and calories don’t count. Right? Right.

As I’m preparing for our traditional cabin weekend filled with family and (way too much) good food, I’ve been stockpiling new recipes to try. Easy Corn Fritters via Sally’s Baking Addiction. Because nothing says summer like fresh sweet corn.
Simple Roasted Red Pepper Pasta from Half Baked Harvest. A gorgeous summer pasta studded with arugula and fresh burrata! I will forever be a carb lover and this recipe looks like the prefect excuse to eat some carbs and cheese. YUM….

It’s Wednesday and time for another Good (Food) Reads, the weekly post where we highlight recipes and foodie articles from around the internet. There’s a whole lot of goodness out there on the web this week so let’s dive right in, shall we?
Skillet Chicken with Tomatoes, Pancetta, and Mozzarella. I’m a sucker for anything with pancetta and ooey-gooey bocconcini so this recipe will be happening in my house ASAP. Plus, I love any excuse to use my Le Creuset cast iron skillet!
My husband hates tomatoes so I stockpile tomato recipes for those nights when I’m eating solo. I think this Tomato and Basil Risotto will be next up on my solo-cooking list! Yum.
Speaking of skillets, I’m super excited to try these Summer Vegetable Skillet Enchiladas. I’m thinking they’re just the answer for this coming Meatless Monday!
As grilling season continues to heat up, I am looking forward to trying these Maple Balsamic Chicken and Bacon Skewers. A step up from standard BBQ fare, for sure. I’m also intrigued by these Balsamic Honey Chicken Peach Skewers.
Chocolate Banana Nut Crunch Cupcakes. Because I can only be virtuous in my diet for so long.
Right now I can’t stop eating ALL. OF. THE. WATERMELON. It’s a real problem. Camille Styles rounds up 20 great watermelon recipes for any of you out there having the same issue I am!
I’m also loving pineapple these days. YummyMummy has a recipe for Vegan Pineapple Ice Cream that I can’t wait to try, right after I make up a batch of this Super Quick Raspberry Ice Cream. Can you tell I’m all about fruit and dessert these days?
Lane and I recently attended a spectacular dinner party which included the best dates as an appetizer. Those were savory – covered in a blue cheese sauce and wrapped in bacon (SO GOOD) – but these dessert style Almond Joy Dates sound just as fantastic.

What have you been making lately? I’m loving easy summer salads as the weather heats up. And just so I don’t sound too virtuous, I’ll confess that I’m also really loving ice cream and frozen treats! In fact, I can’t wait to try these Watermelon Popsicles, from the great Mark Bittman. Do you make your own popsicles?

Zucchini Noodles with Basil-Pumpkin Seed Pesto from Cookie + Kate. Spiralizing is still all the rage. Here’s another take on zoodles.
Egg Yolk Ravioli. I am so intrigued by these. They look so simple and yet so elegant. Do you make your own pasta?
