Fourth of July Favorites

Despite the fact that it feels like summer just started yesterday, the Fourth of July is nearly upon us! If you’ve been a blog reader for some time, you might know that in my family, the Fourth of July is a big deal. Each year we gather at my grandmother’s lake home for a few days of classic Minnesota lake life. It is hands down one of my favorite times of the year. I love the sun soaked days chasing happy kids around and catching up with my extended family. Oh, and did I mention the food is always amazing? My grandmother is an incredible cook and always makes a fantastic feast on the Fourth. Filled with summertime classics as well as old family favorites, it is a meal everyone looks forward. Over time, and as our family has grown, the meal has become a larger family project, with everyone contributing their Fourth of July favorites. Today, I’m sharing my Fourth of July Favorites including some new recipes that I can’t wait to try this upcoming holiday weekend!

Creamy Vanilla Fruit Dip

Just in time for the Fourth of July, we are bringing back a favorite recipe from the With Two Spoons archive that is easy to dress up with some red, white, and blue! This Creamy Vanilla Fruit Dip is a summer time entertaining staple. With only four simple ingredients, it is ready in just a few minutes and is perfect for kids and adults. We first published this recipe in April of last year and it has quickly become a favorite!

Spring has finally sprung here in the midwest and, after surviving nearly two feet of new snow last week, the sun is out and I just went for a run in shorts and a tee shirt. My gratitude for the warm weather knows no bounds after this doozy of a winter!  In addition to warmer temps, one of my favorite things about this time of year is that spring means berry season. My kids, who would probably live on berries if I let them, are especially excited about the rapidly increasing abundance of fresh fruit. While we typically just eat berries plain (by the handful or pint!), sometimes I love to serve them with this Creamy Vanilla Fruit Dip. It’s a simple recipe, perfect for parties and really makes your average berry feel like a special dessert.

Time for another bookish update here on With Two Spoons. If you follow us on social media (and if you don’t, you should!), you might know that in addition to all things food and cooking, we have a serious love of books and reading. As summer reading season ramps up, I thought it might be fun to share a few of my recent reads in case you’re looking for some new titles to add to your summer reading list!

One of my favorite things in the world is a an afternoon at the beach. Tuck me under an umbrella with a cold drink (like a Hugo Spritz!) and a good book and I’m a very happy girl. My husband and I were recently returned from a trip to Hawaii. No Bake Ice Cream Bars – Your New Summer Favorite!

I have long said that if I could only choose one type of food to eat for the rest of my life, it would definitely be ice cream. I loooove ice cream. My love affair with the stuff started with family bike trips to the Dairy Queen as kid. At summer camp during my teen years, I was introduced to the gloriousness of Ben and Jerry’s Phish Food, an addiction that continues today. And don’t even get me started on my gelato obsession. Our family rule is: when in Europe, ice cream must be eaten at least once daily. Needless to say, I’m a fan of ice cream. Maple Glazed Seared Scallops

Do you ever have those dishes that you only order in restaurants because you think that it’s just too complicated to make them at home?

And you pay a fortune for them, but what choice do you have?

That dish is scallops for me.  And it turns out I DO have a choice.  And so do you.

See, in reality, scallops are not at all difficult to make.  In fact these Maple Glazed Seared Scallops are pretty darn easy.  But shhh….I won’t tell if you won’t.  And you will look like a superstar at your next dinner party.
