Carrot Zucchini Fritters with Lemon Basil Aioli (Whole 30, Gluten Free)

Does anyone else out there subscribe to a Community Supported Agriculture (CSA) share?  I get one through a local farm (Featherstone Farms, I love you!), and when I pick up my box of fresh vegetables each week, I get really excited about all of the amazing things that I am going to make.  Perfect heads of lettuce, deep purple eggplants, bright green peppers, sweet yellow corn.

This year I’ve been getting a lot of carrots and zucchini in my boxes, which just so happens to be the perfect combination for making these Carrot Zucchini Fritters with Lemon Basil Aioli.

Although I’ve been hearing this everywhere, it took me awhile to figure out what exactly this meant!  I mean it’s not necessarily vegetarian or vegan…

Finally, I realized it is as simple as making plants the star of the show. Now that is nutrition advice we should ALL get behind.

Let me show you one way to make it not only simple-but delicious as well!  It’s so, so easy with these Roasted Carrots with Easy Thai Peanut Sauce.  (and as I had just published a peanut sauce recipe a few weeks ago, these roasted carrots are quite timely-now you’ll have a great way to use that sauce!)

Strangest winter ever!  Here we are in Minneapolis with no snow and temperatures hovering around 30ºF.  Usually at this time of year we are in a deep freeze under many feet of snow.  Last week the weather people all predicted a huge snowfall, but not a flake fell here in the Twin Cities.  It’s kind of disconcerting.  And as the temperatures are strangely warm, work has been even busier than usual.  I need me some comfort food! Slow Cooker Beef and Vegetable Ragu

Slow Cooker Beef and Vegetable RaguSo, I’ve been told that I can’t eat Edible Peanut Butter Chocolate Chip Cookie Dough every day.

I know, right?  Who are these haters?  Now although I’m still not sure that is completely true, I will admit that sometimes a really good hearty dinner sounds good too (maybe followed by cookie dough?).  And I guess if I’m going to be binging on cookie dough (and I am) then I better try to balance things with some vegetables.  Enter Slow Cooker Beef and Vegetable Ragu.  (And if you don’t have a slow cooker, don’t worry, I’ve got that covered too!)

As meals go, this one checks all of the boxes.  Easy to make.  Kid friendly.  Hearty.  Adaptable.  And as the days and evenings get busier (anyone else feel like they are on a constant Merry-Go-Round?) this Slow Cooker Beef and Vegetable Ragu is a good one to come home to.

Good (Food) Reads: Quick and Easy

Hot Bread KitchenIt’s Wednesday, which means it’s time yet again for another Good (Food) Reads. The last week has been a bit of a whirlwind around here and that has had me on the hunt for quick and easy recipes that the whole family will love. With that in mind, here are this week’s Good (Food) Reads:

Do any of you have an Instant Pot? I got mine last summer on super sale as part of Amazon’s much (over) hyped Prime Day. Since that time, I’ve heard countless people rave about the amazing – and quick! – meals they’ve prepared courtesy of their IPs. Sadly, until now I’ve only used it as a glorified quinoa cooker. Last night I tackled this recipe for Instant Pot Honey Bourbon Chicken. Now, before you guys go nuts, I know there is no bourbon in the recipe. It was a super quick recipe that produced really flavorful, tender chicken in about 20 minutes. I served it with steamed broccoli and Trader Joes’ Organic Brown Rice. I will say that the chicken was a little sweet for me (though my toddler and husband loved it!), so next time I’ll cut the honey down a bit, add a little more soy sauce and may sauté in some actual bourbon at the end….
