It’s been a crazy, but fun, few weeks around here. Lane has been jaunting around Europe on an amazing anniversary trip (Happy Anniversary, L&J!) and I’ve been blending work with a fun little get away of my own (more on that later). In the midst of it all, life has been busy, busy, busy and these are the fun little things that are making it better and keeping me sane. Good Food Reads: November Cravings

Now that I’ve officially eaten my weight in fun-sized candies (I’m looking at you, Twix) and the Halloween decorations have been packed away, I’m really excited to get back to cooking and eating some really good food. As many of you know, it has gotten really cold here in Minnesota and with that, I’ve tended toward comfort foods. I’m talking pastas, slow cooker burrito bowls, and everything drowning in melted cheese! I really can’t complain. For this week’s Good Food Reads, I’ve pulled together a bit of a random collection of recipes I’m hoping to make and share with my friends and family in the next few weeks. As usual, they are gathered from fellow bloggers, some magazines, and even inspired by my reading habits (see *** below!). I hope you find something that inspires you! Here are the links I’m loving this week:

Ok, first and foremost, I need to share this recipe sweet recipe from My Name is Yeh. I’d say the likelihood of me actually making these is slim to none because I don’t do well with crafty in general. But…I had to link to them because they are the cutest: Marzipan Challah Hedgehogs. Someone needs to make them ASAP and report back!

Pork and Polenta Bake. Another comfort food that’s perfect for these chilly November evenings. Talk about taking the classic midwestern casserole to a whole new level. Also, have you checked out our BBQ Chicken Mac & Cheese? Comfort food with a twist!

I’m fairly certain my four year old is gonna love these Pumpkin Chocolate Chip Muffins. I’m eyeing these Pumpkin Scones with Spiced Glaze. I can’t quit you, pumpkin. I just can’t.

Love these recipes for Homemade Cream of Chicken Soup and Homemade Cream of Mushroom Soup. Lower in sodium and with fresh ingredients, just in time for all that holiday baking!

Stuffed Chicken Thighs with Spinach and Goat Cheese. Oh man. I can’t wait to make this one. And serve them with these Buttermilk Blue Cheese Mashed Potatoes. YES, please.

And finally, because I’m just finishing up her great memoir, Give A Girl A Knife, here’s Amy Thielen’s recipe for Classic Chicken and Wild Rice Hotdish.

Good Food Reads || 04.21.17

Good Food Reads

I just returned from a lovely vacation in the Arizona desert. It was filled with sunshine, wonderful family time, and (of course) some seriously good food. As I attempt to reset my diet – and (let’s be honest) reintroduce vegetables to my body! – I am craving all of that amazing southwest food we indulged in. So, with that being said you’ll have to forgive the slightly spicy bent to today’s Good Food Reads. What can I say? I’ve got big, bold flavors on the brain and I’m not feeling sad about it.

Like I mentioned, I’m attempting to dial back the indulgences this week while keeping all of that amazing flavor. I was so excited to find this recipe from Cooking Light for Chicken and Poblano Stew with Polenta. This recipe has chipotles in adobo, which is one of my favorite ingredients, but also roasted poblanos so the smoky heat should be amazing.

Breakfast Tacos Al Pastor, via Half Baked Harvest. Because there’s no reason that my current cravings should stop at breakfast! Also, they have pineapple in them. GENIUS.

And because I can’t stop, won’t stop: Carne Asada Burrito Bowls. This recipe does require a little advanced prep with the steak marinade, but they payoff should be worth it. I’m planning to double the recipe and bring some bowls to work this weekend!

You know I can’t resist a good sheet pan recipe. This week I really want to this recipe for Sheet Pan Roasted Jambalya. There is just something about those pictures full of wonderfully bright vegetables and fresh shrimp that I can’t stop thinking about!

Another batch prep for me this week: Creamy Roasted Red Pepper Tomato Soup. Even though things are starting to warm up here in Minnesota (hellooooo spring!), I’m still loving soup. This gorgeous soup from Dana at Minimalist Baker is vegan and gluten free. Plus, it uses coconut milk and dill for a little something extra. YUM.

As I noted earlier, I’m trying to up my vegetable game this week but I’m just not feeling my usual salads. I’m hoping to try these Sweet Chili Roasted Brussels Sprouts tonight. The mix of sweet chili and soy sauces is right up my alley!

Ok, admittedly, this Strawberry Almond Tea Cake recipe has absolutely nothing to do with my recent travels/cravings and everything to do with the arrival of strawberry season and the crazy gorgeous photos from Broma Bakery.

And finally, I give you: Mexican Chocolate Churro Rice Krispie Treats. Oh my heavens. Are these for real?!?!

Thank You – And An Announcement!

AnnouncementIt’s been a little over a year since we officially launched With Two Spoons. In that year, we have had a great time cooking, sharing recipes, taking photos, and figuring out the blogging world. As you can probably imagine, we have had a ton of fun – and learned a thing or two along the way!

Over the past few months, Lane has done the vast majority of work on the blog as I’ve taken time largely off to focus on being a new mama. She has been absolutely amazing (seriously, did you see the peanut butter cookie dough she posted last week!?!?!). In the midst of all that work (both blog and baby!) we both realized that we need to change up the way we do things around here, for both of our sakes. We want to continue to bring great content to the site. In fact, we want it to be even better, with fresh new recipes, menu plans, and more exciting stuff. We are working hard to improve With Two Spoons with (hopefully) an improved design for the site and a more clear focus for who we are and what we do as home cooks and novice writers.  We also want to keep the fun in producing all of the foodie goodness you get here and for right now that means bringing down the volume of posts just a bit. Yup, we are dialing back on quantity so that we can really do it right. Quality over quantity. So, on to the big announcement…

Starting on Friday, we are going to be changing up our posting schedule. We will be sharing new content every Tuesday and Friday instead of our current Monday, Wednesday, Friday schedule. Starting in April, look for new recipes on Tuesdays and a variety of fun things to start your weekend right on Friday mornings. In order to get this reset going, we may be taking some time off intermittently over the next few months – so you may find some oldies but goodies making repeat appearances, mixed in with Good Food Reads and some occasional new recipes as well. We will return, full force, in the beginning of April with a whole new With Two Spoons that I think you’re going to absolutely love.

Most importantly, we want to say thank you so much for your support this past year. We are so excited to share the new and improved With Two Spoons very, very soon!
