Butternut Squash Noodles Alfredo

I’ve been craving vegetables lately, and that is a little odd.  Although I was a vegetarian for a year or two, (many, many years ago), I can honestly say that vegetables are not anywhere on my cravings list (I won’t lie, that is the list that starts and ends with chocolate.  And wine.)  My local grocery store has started carrying spiralized vegetables and every time I go into the store I’m drawn to their amazing colors…and then I keep walking.

Truth be told I even OWN a spiralizer.  And it’s never been out of the box.  I own a cookbook to go with it (that I’ve never opened).  All of that changed this weekend with these Butternut Squash Noodles Alfredo….

Salted Caramel Apple Tart

I think I’ve previously mentioned my trip to the Apple House, where I bought too many apples (Is too many apples even a thing?).  Although I made this fabulous Autumn Apple Crisp, which my family devoured, I also wanted to make something a bit more elegant.  I’ve been on a tart kick lately-Blueberry Lemon Cream Cheese Tart, Raspberry Cream Cheese Tart, and I’ve found them not only easy to make, but also visually pleasing.  Since I had just made Salted Caramel Sauce, and had so many apples, it seemed like a match made in heaven to create this Salted Caramel Apple Tart!…

Thai Chicken Soup

As I sit here in my yoga pants and sweatshirt (don’t judge-it’s the weekend!), listening to the breeze ruffle the leaves, I think I finally have to admit summer is over.  I am crying inside knowing that it will be a long 9 months until I can swim in the lake (fellow Minnesotans know this is actually quite optimistic, but let me have my delusions).   But for all of those tears, I am also secretly excited for the beauties of fall.  Football games, gorgeous brilliant leaves in all colors of the rainbow, sweatshirts (I really love them enough to give them two mentions) and of course…soup.  And for the perfect meal to straddle that summer into fall weather… Thai Chicken Soup.  …
