One of the things that I’ve come to love most about my Instant Pot is the ability to make quick soups and stews that taste like they have been simmering away all day. It’s especially great on those busy weeknights when you really need dinner on the table but you don’t have a lot of time. Recently, I’ve started to take on my favorite classic recipes and this week’s recipe is just that – a Classic Butternut Squash Soup in An Instant (Pot)!…
Butternut Squash Fries with Sriracha Mayo
Fall is officially here and I just harvested the last butternut squash from my garden. And although I do LOVE a good butternut squash soup (like this Thai Butternut Squash Soup), I was looking for something just a little bit different to do with my last butternut squash of the season (well, at least my last home grown butternut squash). Enter Butternut Squash Fries with Sriracha Mayo. Because vegetables should not be complicated.

Instant Pot Black Bean Tacos with Avocado Crema
Without further ado, here is the recipe for the Instant Pot Black Bean Tacos with Avocado Crema that I had promised you all! (and for extra yum, they contain butternut squash as well!)
I recently hosted one of my book clubs and decided the theme should be tacos. The book was “Americanah”, and if you’ve ever read this book you’re wondering right now where I got the idea for a taco theme. Spoiler alert, my mind works in mysterious ways. I can’t explain it. I won’t even try. But for some reason, this book made me decide to create a recipe for Instant Pot Black Bean Tacos with Avocado Crema and I’m sure glad it did. …
Instant Pot Thai Butternut Squash Soup
This Instant Pot Thai Butternut Squash Soup is a unique twist on an old favorite-made fast using the Instant Pot!
Winter is here in Minneapolis. Oh sure, it’s not TECHNICALLY winter (which I’m reminded of frequently by my rule following 6 year old), but Thanksgiving is over, the cold has moved in, and it’s dark hours and hours before we go to bed. (Notice I don’t say before I’m READY to go to bed…). With the cold comes the need for soup. Warm, comforting, fill-you-up soup. Like this Instant Pot Thai Butternut Squash Soup. …
Butternut Squash Noodles Alfredo
I’ve been craving vegetables lately, and that is a little odd. Although I was a vegetarian for a year or two, (many, many years ago), I can honestly say that vegetables are not anywhere on my cravings list (I won’t lie, that is the list that starts and ends with chocolate. And wine.) My local grocery store has started carrying spiralized vegetables and every time I go into the store I’m drawn to their amazing colors…and then I keep walking.
Truth be told I even OWN a spiralizer. And it’s never been out of the box. I own a cookbook to go with it (that I’ve never opened). All of that changed this weekend with these Butternut Squash Noodles Alfredo….

Good Food Reads | 12.14.16
Happy Wednesday, friends! I don’t know about you, but I’m smack in the middle of holiday preparations around here. Christmas is coming and with it – lots of food and fun (and presents to wrap!). While I’m busy planning our holiday menu contributions, I’ve also got a family to feed each day and this week I want festive but easy things to fill our table. This week’s Good Food Reads are a little selfish because they’re all things that I want to cook this week! I’ve got some healthy-ish things on my list as I like to save room for those Christmas cookies that inevitably find their way into our home. Also included are some appetizers and a great chicken salad dip as well as a recipe for gorgeous linzer cookies. Finally, I’ve got a great list of cookbooks, perfect for gifting. I hope you enjoy this week’s Good Food Reads as much as I do! …
