As we approach the upcoming holiday weekend and the world continues the process of reopening, many people will be entertaining (at an appropriate social distance!) for the first time in awhile. I don’t know about you, but I plan to celebrate the reentry into some social events with dessert. Lots of it. Here are my favorite Simple Summer Desserts!
…No Bake Ice Cream Bars – Your New Summer Favorite!
I have long said that if I could only choose one type of food to eat for the rest of my life, it would definitely be ice cream. I loooove ice cream. My love affair with the stuff started with family bike trips to the Dairy Queen as kid. At summer camp during my teen years, I was introduced to the gloriousness of Ben and Jerry’s Phish Food, an addiction that continues today. And don’t even get me started on my gelato obsession. Our family rule is: when in Europe, ice cream must be eaten at least once daily. Needless to say, I’m a fan of ice cream. That’s why I’m so excited to share with you our all-new No Bake Ice Cream Bars!

Double Chocolate Olive Oil Brownies
The Whole30 is over for me, and although I am eating a much more healthy diet (give me all of the fruits and vegetables!) I am finding that a little indulgence goes a long way, and is SO needed from time to time. Take these Double Chocolate Olive Oil Brownies for example. Each brownie has a crackly top, a fudgy, chewy interior, and chocolate for days. And they’re made with my secret weapon from Queen Creek Olive Mill! Bet you can’t eat just one! (head directly to the bottom of the post for your new favorite recipe).

Of course all opinions are ours alone because we wouldn’t have it any other way!. (As this recipe contains alcohol, this recipe is meant for persons over 21!)
In the past, an after dinner drink was only something I would enjoy at a restaurant. It was the thing I savored at the end of a long, decadent meal at some place I’d been dying to go to for months. An after dinner drink always felt like a total indulgence and something to be savored. With two young kids, my opportunities for long, lazy dinners out have become less frequent and I’ve been enjoying more entertaining at home. So, I figured, why not bring the after dinner drink home, too? Our Bourbon Salted Caramel Coffee with Whipped Cream will be a total hit at your next dinner party. Using Torani syrup for that fabulous salted caramel flavor and serving in JoyJolt glasses for a beautiful presentation, this drink will be your new go to!…

Dark Chocolate Peanut Butter Cups
I have a confession: I’m not a huge fan of Valentine’s Day. I know, I know. It’s a holiday celebrating love. What’s not to, well, love? I adore the idea of celebrating those we cherish but truthfully, I sometimes think it’s all just a bit much. Overpriced flowers. Complicated and overpriced dinners. Boxes of chocolates filled with strange flavors where you just pray for the chocolate covered caramels. Well, I can’t do much about the flowers or the prix-fixe dinners, but I am going to share an amazing recipe for Dark Chocolate Peanut Butter Cups that are simple, inexpensive, and way better than those heart shaped box options! Your Valentine will love them. And so will you.
