Curried Cauliflower Quinoa Salad

Hey friends! The end of summer has been a little crazy here at With Two Spoons so we are taking the week off from our kitchens and revisiting some of our favorite recipes of days past. I’ve been loving this Curried Cauliflower Quinoa Salad for easy, portable lunches these days. If you haven’t tried it before, read on and give it a try the next time you’re in the mood for a great, flavor packed lunch or side dish.

Cauliflower Quinoa Curry

I’ve always been a voracious reader (and eater, truth be told) and when e-readers first came out, I swore up and down that nothing – nothing! – would ever replace a physical book in my mind. I loved the feel of them in my hand, the smell of the paper, and seeing them stacked up on my bookshelves. Well, fast forward a few short years later and my kindle is one of my very favorite things. I love having so many books at my fingertips and not having to carry so many heavy books when I travel. The one thing it hasn’t replaced? My cookbooks. I will confess that I probably have a bit of a cookbook addiction. I love them. I read them like novels, pouring over the beautiful photos and stuffing bits of colorful post-it notes onto the pages of recipes I want to try. Growing up, my grandmother had the most impressive collection of cookbooks I’ve ever seen and I’m fairly certain my love of cookbooks comes straight from her. Some of the best books her in collection? Small town church cookbooks.  Those little gems are filled with home cooking treasures and I love to read them for inspiration from fellow home cooks. Good Food Reads: Back In The Saddle

Hey All! I’ve just returned from a fantastic week in coastal Rhode Island with my family. We were blessed to spend a few years living in Boston before we had children and I will always love this time of year on the East Coast. Our time away was filled with lots of hours at the beach (yay for a warm early September and non-crowded beaches!) and plenty of good, fresh seafood. I may or may not have eaten my weight in lobster rolls! Now that I’m back to the Midwest and finally unpacked – let’s not mention the laundry – I’m also getting back into my kitchen. One of my favorite travel tricks is to order groceries to be delivered on the day we return from a trip and we supplemented that this time by also having Blue Apron deliver a few days after we returned! I love not having to stress out about getting to the grocery store for essentials and not having to think about meals (even for someone like me who generally finds cooking relaxin) was great. That being said, I’m really ready to get back into it and so for this week’s Good Food Reads, I’m sharing my list of what I’m hoping to make in the next week or so! Good Food Reads || 04.14.17

Another Friday has come and that means a new edition of Good Food Reads. With Easter only a few days away, we have a few holiday themed recipes (of course) but we also have some recipes for the post-holiday hangover. I don’t know about you, but after all the busy prep for big holiday meals, I find myself avoiding the kitchen for a few days. As a result, I love to have some easy, prep ’em and leave ’em type recipes in my pocket to get my family fed and keep my sanity intact. Here’s hoping you enjoy our picks for Good Food Reads as much as we have enjoyed finding them!

Healthy Easter Brunch Recipes, if you’re still looking for that perfect dish for this weekend’s festivities.

White Chocolate Peanut Butter Eggs just in time for the Easter Weekend! Want something a little more substantial? Try this Carrot Layer Cake. Perfect every-bunny (yup, I went there..!).

One Pot Chicken and Coconut Curry Noodles. Another recipe for my one pot meal list!

I have a long love affair with Indian food. I don’t love all the hours over the stove, however. Enter: Slow Cooker Indian Butter Chicken from Dinner: A Love Story.

Salad for breakfast. Yup, for those days when you want to feel super virtuous. Or just eat a really yummy breakfast! And after you eat that salad, feel free to indulge in Blueberry Pistachio Coffee Cake.

After two vacations in the last two months, I’m feeling the need to focus a little more on whole foods and less carbs (gulp). I’m thinking these Vietnamese Beef Lettuce Wraps will make a satisfying meal that doesn’t feel like diet food! I’m also looking forward to trying the Spring Detox Cauliflower Salad from Pinch of Yum.

Everything Greek Pork Pitas. Another slow cooker gem, but with a lighter twist for warmer weather.

Good Food Reads | 01.11.17

Good Food Reads

I woke up early this morning to the most beautiful of winter snowfalls. Big, fluffy flakes falling softly and covering the still dark streets in a blanket of white. Days like this make me crave comfort foods like soups and stews and rich desserts even more than I usually do and have certainly inspired my picks for this week’s Good Food Reads.

Herby Lentil and Sausage Soup from Cooking Light is on the menu for tomorrow night. I’m hopeful that this one will even get the thumbs up from my preschooler! I’m also looking to try out this other recipe from CL for Hearty Tortellini Soup. 

Speaking of my preschooler…are you guys familiar with Weelicious? It’s a great website for anyone with kids who loves food and wants to feed their kids real food that adults will love as well. This week, I’m loving their 15 Hacks for Store Bought Rotisserie Chicken and can’t wait to try out the California Style Cauliflower Rice and Beans as well.

Like many others this time of year, I’m trying to reset a little in my diet after a season of pure indulgence. I’ve always found that when I eat a hearty, healthy breakfast, I tend to snack less throughout the day and generally make better choices. These Fruit, Nut, and Brown Sugar Freezer Oatmeal Cups will be perfect for days when I want a great breakfast but don’t really want to cook! (via Better Homes and Gardens)

And for those days when I want a really comforting breakfast but don’t care about calories (i.e. just about every Sunday!), I give you: Blood Orange and Cardamom French Toast (Spoon Fork Bacon).

I bought a large chunk of feta cheese last week for an appetizer I was making and have quite a bit left that needs to be put to use ASAP! I think these Feta Stuffed Chicken Breasts should do the trick (via Better Homes and Gardens).

And finally, an easy dessert sure to please just about everyone from Kelsey Nixon of Cooking Channel fame: Caramelitas.
