If you’ve been reading the blog for awhile, you may know that I’m a really big fan of one-pot and sheet pan style dinners. Like so many busy parents, I rely on a well tested rotation of weeknight dinner recipes to get through those busy weeks. My personal collection of go to recipes seems to have a common theme: they are all easy to prepare, don’t need fancy ingredients, and don’t make a huge mess (because, let’s face it, dishes are the least fun part of cooking!). Recently, I’ve been looking to add some new dishes to our rotation and with winter seemingly never ending around here, I wanted to get some more bright flavors onto our plates. This week’s recipe for Lemon Roasted Shrimp with Broccoli and Rice does all of that and more. I think you’ll love it!

Good Food Reads: Travel Inspired Recipes
I’ve always loved the excitement of travel and the experiences of getting lost in a new culture. Over the years, my travels have taken me around the globe and I have so many great memories from each trip I’ve taken. Many of those memories are centered around special meals, shared with friends, in various places around the world. I love trying new foods and flavors and I especially love that those foods can come home with me and help me to relive those great memories in my own kitchen! When I’m feeling the wanderlust and I don’t have time to hit the road, I head to the grocery store and get cooking. Dark Chocolate Peanut Butter Cups
I have a confession: I’m not a huge fan of Valentine’s Day. I know, I know. It’s a holiday celebrating love. What’s not to, well, love? I adore the idea of celebrating those we cherish but truthfully, I sometimes think it’s all just a bit much. Overpriced flowers. Complicated and overpriced dinners. Boxes of chocolates filled with strange flavors where you just pray for the chocolate covered caramels. Well, I can’t do much about the flowers or the prix-fixe dinners, but I am going to share an amazing recipe for Dark Chocolate Peanut Butter Cups that are simple, inexpensive, and way better than those heart shaped box options! Your Valentine will love them. And so will you.

Good Food Reads: Super Bowl Party Favorites!
The countdown is ON. With only two days until Super Bowl LII, it is definitely go-time on the game day menu. I absolutely love Super Bowl parties because they give me an excuse to make lots of appetizers and bite sized treats. Chips, dips, wings, cheese trays? I’m in.
