As I sit here in my yoga pants and sweatshirt (don’t judge-it’s the weekend!), listening to the breeze ruffle the leaves, I think I finally have to admit summer is over. I am crying inside knowing that it will be a long 9 months until I can swim in the lake (fellow Minnesotans know this is actually quite optimistic, but let me have my delusions). But for all of those tears, I am also secretly excited for the beauties of fall. Football games, gorgeous brilliant leaves in all colors of the rainbow, sweatshirts (I really love them enough to give them two mentions) and of course…soup. And for the perfect meal to straddle that summer into fall weather… Thai Chicken Soup. …
Veggified Sloppy Joes
Who doesn’t love Sloppy Joes? And these may be the best Sloppy Joes ever! These easy sandwiches are packed with lean ground beef, a delicious sauce and healthy vegetables!
Are you looking for a delectable way to get more veggies into your kids? Yep, me too. In a never ending battle to get more nutrition into the foods my kids eat, I developed a sloppy joe recipe brimming with extra nutrition. I knew Veggified Sloppy Joes were a winner when both of my kids asked for seconds. (and shhh…I found my teenager eating the leftovers the next day!)…
Blueberry Lemon Cream Cheese Tart
Holly and I were recently tasked with providing the dessert course of a girls’ night dinner hosted by a good friend. As you can imagine, we agonized over what to make. Should we do individual desserts? Ice cream? (I just got an ice cream maker-stay tuned) Cookies? So many fabulous choices! Ultimately we decided on tarts. Holly did an amazing chocolate peanut butter tart that I hope she will share with us here soon. To balance things, I decided to do fruit tarts. I guess it was a good call, because I’ve had several requests for the Blueberry Lemon Cream Cheese Tart recipe…so here’s to you gals!…
Mediterranean Salmon Farro Bowls
I was trying to think of something great to make for dinner while at the cabin this weekend. I knew it was going to be just my husband and I and our 5 year old, so I was looking for something simple. I also knew it was going to be rainy, so I wanted something comforting. My 5 year old and I had been watching Pioneer Woman on Food Network (I will happily to admit to having the biggest girlcrush on Ree…) when he said, “mama we should make that sometime…but I won’t eat the radishes”. I have to admit that I hadn’t really been paying attention, but when I did…Mediterranean Salmon Farro Bowls were born!

Sausage and Roasted Red Pepper Egg Bake
You know how sometimes you make those mistakes that you look back on and say “I didn’t mean to do that, but I am sure glad I did!”? Those mistakes that occur because you’re on warp speed, and you just need to slow down a notch or two? Well this Sausage and Roasted Red Pepper Egg Bake was born out of one of those mistakes. And a glorious mistake it was… (WARNING: This egg bake is not for the sausage averse…)…
Chipotle Caesar Salad
It is possible some of you are going to say I took too many liberties with this Chipotle Caesar Salad, and maybe that is true. If you are looking for a very traditional version of a caesar salad-well, you may have to keep looking. This salad isn’t your mother’s caesar salad after all. This salad features a lighter Caesar dressing, a hint of spicy chipotle and best of all bacon. And if this doesn’t intrigue you, well maybe we weren’t meant to be friends after all……
Cherry Rhubarb Crisp
You know those friends who have your back? Those friends who, when you hint that you might be able to use some of the extra rhubarb from their garden, give you not only rhubarb, but also a split of their rhubarb plant to plant in your own garden? Well, Amy and Peter are those friends. Amy recently gave me a whole arm load of rhubarb, not to mention a rhubarb plant that then got planted in my backyard! The only thing Amy asked in return was to see what I made with the rhubarb. Well, that sure was easy, I made this Cherry Rhubarb Crisp! So now my WHOLE family thanks you, Amy and Peter!…
Fish Tacos with Chipotle Crema
I still remember my very first fish taco. I had just moved from Minneapolis to Houston, TX and it was over 100 degrees outside. I stumbled upon a little taqueria called Berryhill Baja Grill, and was introduced to the amazing flavor profile of the fish taco. I immediately called my mom and she was not quite as excited about the idea of a fish taco, which was still very foreign in the year 2000 in the midwest. I could sense her hesitation when I told her that it was at the top of my list for her next visit, until……
BBQ Chicken Pizza
Given the choice, I am always going to pick savory over sweet. Every time. Recently though, while trying to decide what to have for dinner I decided that I wanted sweet AND savory. Enter BBQ Chicken Pizza. Every restaurant has some version of this pizza, and sure you can certainly go out and buy this kind of pizza (or even order it for delivery). But I’m here to tell you how easy it is to make-without leaving your home! So easy you should try it tonight! And even my kids will tell you, there is nothing better than homemade pizza….
Cabin Burgers
I tried to come up with a catchier name than Cabin Burgers, I really did. But the truth of the matter is, this is the meal that the kids beg for when we head to the cabin, and thus they have always been called “Cabin Burgers”. The name just stuck, boring or not. And although the name may be boring, this burger is anything but……
