Chocolate Peanut Butter Torte

Hey friends, just popping in here for a late Friday night post. We had a little technical glitch with the blog this morning – so very sorry if you stopped by earlier! The issue seems to be resolved, at least for now, and we’ll be back next week with our regular posting schedule. In the mean time, I wanted to share this fantastic Chocolate Peanut Butter Torte. It’s only slightly modified from the original genius recipe by blogger couple Kevin and Amanda (I added a little french sea salt for finishing) and so rather than post the recipe, I’m just going to direct you over to their wonderful blog here.

I made this torte – which they call a pie – twice last week and both times it was gobbled up. The best part of the recipe is that it really is no bake! You’ll need a microwave to melt some butter, the stovetop (or, if you’re brave, the microwave again) to heat some cream, and a food processor for grinding up all those oreos, but no oven. I do recommend a torte pan with a removable bottom for ease of slicing and all around presentation but you most definitely could make this chocolate wonder in a traditional pie pan.

Now, it’s important to note that all the fantastic chocolate and peanut butter make it suuuuuuuper rich, so a very small slice goes a long way. In other words, it may not seem like it, but this dessert will most definitely feed a crowd. Plan to make it a little ahead of time as it is definitely best served chilled. It is also wonderful served with a light dollop of whipped cream, which ironically seems to counter the heaviness of all that great chocolate and butter. Do yourself a favor this holiday weekend and make one to share with your friends and family. You won’t regret it.

One Pot Pasta

As a busy mama, I have come to really appreciate a quick, one-pot meal. Less pots = less clean up and more time with my family and these days, that is worth everything. This One Pot Pasta with Tomato, Spinach, and Mozzarella fits right into my crazy schedule and is gobbled up by my hungry husband and toddler alike. Filled with healthy ingredients available at any grocery store (in other words, I can grab everything in 10 minutes on my way home from work!), this pasta dish is hearty, healthy, and on your table in under 3o minutes. The recipe is based off of a recent feature in Cooking Light Magazine, one of my go to sources for fast and fresh dinners. I’ve adapted the dish to suit my family’s tastes and I hope you love it. Pesto Caprese Dip

I’m always on the lookout for a crowd pleasing, easy, appetizer for those last minute get togethers or weekends at the lake. This recipe for Pesto Caprese Dip is one of those recipes that I make again and again that requires minimal effort but packs a maximal punch. It requires only a few ingredients and can be prepared ahead of time and baked just before you’re ready to serve it, which makes it perfect for entertaining. The Pesto Caprese Dip takes advantage of the late summer bounty of cherry tomatoes and fresh basil, but if you have a source for good basil in the winter, it’s really a great recipe year round. Even my picky eater husband (who hates tomatoes!) gobbles it up. It’s rare that there are any left overs! The recipe is adapted from an appetizer a neighbor and dear friend (Hi Kara!) shared with me last summer (find the original here) and I’ve tweaked it over time to reflect my personal tastes but I will say, the original is a mighty fine option as well, particularly if you’ve run out of pesto or just don’t like it….

Lemon Blueberry Muffins

Lemon Blueberry MuffinsMuffins. Oh, how I love you. And oh how very picky I am about muffins. Why? Well, if I’m going to eat cake for breakfast (because, let’s face it, they really are just unfrosted cupcakes that we all pretend are not desserts), I want them to be juuuuuust right. Not too sweet, definitely not too dry, and studded with the sweetest bits of tart fruit. After a long search, I’ve finally found a recipe for the best Lemon Blueberry Muffins and I’m going to share it with you today. You’re welcome.

I’ve long been a fan of America’s Test Kitchen and a few years ago was given a copy of their Family Cookbook (I use this edition; here is a link to the newest one). Like just about everything ATK does, this cookbook is filled with great, near foolproof recipes for just about anything you could want. One of my favorite finds in that book is the recipe for “Big Beautiful Muffins.” You guys, you have to have make these muffins. They are super easy to make and (scout’s honor!) turn out perfectly every time. I love to make a double batch and freeze them for later – 20 seconds in a microwave and they make a perfectly fresh on-the-go breakfast!…

Good Food ReadsIt’s Good (Food) Reads time again and I’m back from vacation and excited to share some great food inspiration with you all! After being away on vacation and not cooking for a while, I’m am ready to head back into my kitchen and try some new things. We love finding and sharing new recipes and videos with you, so if you have something you love and want us to share, be sure to send it our way! Oh, and one more thing – Lane forgot to mention that Monday’s post was our 100th! I can hardly believe we’ve already hit a fun little milestone. Thanks for following along. We can’t wait to see what the next 100 bring.

Ok, here we go…

BLT Balsamic Chicken Avocado and Feta Salad (Cafe Delites) is pretty much the salad of my summer dreams. Does anyone else feel the need to detox with nothing but salads after a vacation? I just want to eat allllllll the greens. The avocado and feta doesn’t hurt one bit, though!

Summer Squash Pizza (Smitten Kitchen) makes me feel all virtuous about pizza. And using summer’s bounty of zucchini and squash. Plus, it’s Smitten Kitchen, which is pretty much a guaranteed winner in my experience.

I think this may blur the line with the whole salad thing but I don’t really care. I’m saving this one for a night when my hubby is gone as he hates nectarines (sad but true). Still, I’m really excited to try this Nectarine Panzanella with Homemade Garlic Croutons (My Kitchen Love)

Super Healthy Broccoli Salad (The Fed Up Foodie). Like I said, I can’t get enough of the salads right now!

Cheesy Jalapeno Bacon Meatballs (Hey Grill, Hey) because I can’t always be virtuous. Plus, my little guy loves meatballs and this sounds like a fun take on a classic.

Frozen Peach Lemonade (As Easy As Apple Pie). Without vodka for now. With vodka later. YES.

Healthy Hawaiian Chicken Noodle Bowls (Fit Foodie Finds). My husband and I just returned from Hawaii and I can’t wait to make these noodle bowls from MN fave Fit Foodie Finds.

Challah Donuts (Molly Yeh). Because seriously, CHALLAH DONUTS. I can’t even. Someone please make these for me? Pretty please?

Blueberry Caprese Salad (Floating Kitchen). Love this take on a caprese. I’m still devouring blueberries like there’s no tomorrow and this will be a fun twist on a classic summer salad.

Brown Rice Pilaf for Instant Pot (Mel’s Kitchen Cafe). Do you have an InstantPot? I am trying to find more and more recipes to take advantage of the crazy time savings with pressure cooking. This brown rice pilaf seems like a great place to start.

Asian Turkey Burgers (Andie Mitchell). I am on a quest to find a flavor filled turkey burger that doesn’t dry out and definitely doesn’t serve as a meager substitute for a traditional burger and I have high hopes for this one.
