Lemon Thyme Vinaigrette

I am a bit of a creature of habit and almost no where is that more evident than in my daily lunch choices when I’m home. I love to make big salads, full of whatever veggies I have in my fridge. The key to making salads really stand out is definitely the dressing. While I do love some store bought options (especially the ones by Salad Girl), I also love to make my own. Lately, I’ve had this Lemon Thyme Vinaigrette on repeat.

Making your own salad dressing really is just about one of the easiest things in the world. All you really need is good oil, an acid, some seasoning, and a jar. I came up with this simple Lemon Thyme Vinaigrette while up at Lane’s cabin this spring. We were testing a lentil dish (coming to the blog soon!) and the flavor I had in my head wasn’t really working out. We had an abundance of lemons and herbs that weekend, so I grabbed some mustard, a little thyme, a fresh lemon and got to work. Summer Recipes I Can’t Wait To Try!

Life has been a bit of a whirlwind lately and my time in the kitchen has been a little limited, much to my dismay. I love to try new recipes and typically aim to try 1-2 each week. I’m still working away at my #52weeksproject (and will post an update later this summer), and while my recipe trials have slowed down in recent weeks, my list of recipes I am itching to make just keeps growing. I’ve got new cookbooks peppered with post-it notes, recipes pulled from magazines, and blogs and pins saved to my computer. Now I just need to find some time to cook – and some hungry people to eat all of that good food. This Friday Five is all about the Summer Recipes I Can’t Wait To Try!

It’s grill season and I’m absolutely itching to give these Grilled Gorgozola Potatoes a try. Carbs and cheese? It’s a guaranteed winner.

Oat milk is all the rage with the cool kids these days. Here’s how to make your own.

Another grill recipe I think sounds fantastic? Browned Butter Grilled Peaches with Cinnamon “Toast” Brioche Crumbs. I’ve grilled peaches before (check out our recipe for Grilled Peach and Arugula Salad) but I love the idea of the toast crumbs to add texture and a whole other level of flavor!

I’m always a fan of a one-pot recipe. This One Pot Pasta Primavera with Summer Veggies and Ricotta looks awesome and easy!

Coffee Caramel Ice Cream Pie. It’s basically all of my favorite things in one single recipe. The Vanilla Bean Blog always gets it right and I’m certain this recipe will be a new family favorite.

Watermelon is everywhere right now and so fresh and delicious. I’m planning to give these Mezcal Margarita Watermelon Wedges a try next weekend.

How refreshing and perfect for summer does this Smoky Grilled Chicken with Cucumber Yogurt Sauce sound?

I love a great summer side dish and this Thai Cucumber Salad sounds fantastic.

Hot Honey Butter Bath Corn. Um…what? This one could be a sweet corn game changer.

I don’t know about you, but when it comes to summer entertaining, I want one thing: EASY. No fussy ingredients or long cooking times, no ma’am. I am looking for fresh, simple dishes that don’t take a lot of time or heat.

Fourth of July Favorites

Despite the fact that it feels like summer just started yesterday, the Fourth of July is nearly upon us! If you’ve been a blog reader for some time, you might know that in my family, the Fourth of July is a big deal. Each year we gather at my grandmother’s lake home for a few days of classic Minnesota lake life. It is hands down one of my favorite times of the year. I love the sun soaked days chasing happy kids around and catching up with my extended family. Oh, and did I mention the food is always amazing? My grandmother is an incredible cook and always makes a fantastic feast on the Fourth. Filled with summertime classics as well as old family favorites, it is a meal everyone looks forward. Over time, and as our family has grown, the meal has become a larger family project, with everyone contributing their Fourth of July favorites. Today, I’m sharing my Fourth of July Favorites including some new recipes that I can’t wait to try this upcoming holiday weekend!
